2015 ’Pantelis’ Cabernet Sauvignon The Pantelis Cabernet Sauvignon is our signature wine and bears the name of the family patriarch. Pantelis Zachopoulos (1927-1998) immigrated to Australia from Greece in 1966 with his wife Olga and four children. His diverse agricultural knowledge was passed onto his children Michael, Nicholas and myself [Zissis]. In 1998 a few months before his passing we purchased and began establishing our vineyard in the Barossa Ranges. I decided to make this wine in his honor as a token of our appreciation for everything he has taught us. The wine has dark rich fruits, plum and blackcurrant with a touch of typical Cabernet herbaceousness on the nose. The palate is long and full with lovely dark chocolate, Mocca and cassis favours.

Enjoy the ride! This wine has a medium ruby colour, fragrant ripe raspberries with a hint of confectionary on the nose. A palate of sweet juicy red fruits with very fine soft tannins and a good length. Drink now as made for immediate enjoyment.

Displaying concentrated flavours of dark forest fruits, plum and cocoa to complement the sweet vanilla oak. Fermented for 7 – 10 days in traditional open top fermenters the wine undergoes malo-lactic fermentation in French and American hogsheads followed by twenty months oak maturation. Vasse Felix produces fine Margaret River reds with great balance and style. This traditional blend of Shiraz and Cabernet Sauvignon shows sweet mid-palate fruit with liquorice and spice and good tannin structure. Fantastic French oak integration enabling soft tannin complexity and a lovely length of flavour.

This wine is extremely fragrant, revealing aromas of fresh raspberries, maraschino cherries and peppery spices. The palate is medium bodied with flavours of juicy berries and soft tannins with exotic subtleties of pomogranate and rose. Matches perfectly well with slow cooked casseroles, stews and tomato-based dishes like spaghetti Bolognese.
