Paringa Estate Estate Chardonnay Mornington Peninsula The fruit for the Estate Chardonnay is sourced from low yielding estate vineyards, some of which are over thirty years old. Constant attention to detail in the vineyard and vine maturity produces fruit of outstanding quality. The fruit is handpicked, whole-bunch pressed, and the unclarified juice is fermented in new (approx 30%) and one-year-old French oak puncheons and barriques. Rockburn Pinot Noir is a ripe, fleshy pinot noir with black cherry, blackcurrant and toasty oak flavours. Good concentration and a silken texture with powerful sweet fruit flavours driving a lengthy finish.

CASTELLO DI VOLPAIA Riserva, Chianti Classico DOCG The fruit from each Castello di Volpaia vineyard is harvested and vinified separately. The Volpaia Chianti Classico Riserva is made from a blend of these wines, selected from the performing vineyards. The grapes are harvested by hand and collected in boxes holding less than 20Kgs of fruit. In the winery, they are destemmed and lightly pressed before fermentation commences use their own yeasts for two weeks. After this, the wines macerate for a further ten days on their own skins to give structure, complexity and colour to the wines prior to malolactic fermentation to make the wine more approachable. Ageing takes place in oak barrels for 24 months.
