Local, sustainably sourced molasses is blended with our unique water. Artisan distillers hand make the wash and double distil it. Before the premium spirit is aged in oak casks, we bottle a very limited quantity for you to enjoy in cocktails and mixed drinks.

Mount Gay Eclipse Rum is widely recognised as the oldest rum in the world. Eclipse has a brilliant golden amber colour and a luxuriously complex aroma. Aged in charred, American oak barrels for a minimum of two years, producing a rum with flavours of apricot, banana and vanilla. The barrel ageing gives the Rum a lightly smoked character and a long lasting finish. Eclipse has a warm, medium body with a bright finish. Its subtle smokiness is imparted by the toasted Kentucky oak barrels in which the rum is aged.

A moderate sweet molasses/vanilla palate with hints of well balanced spices of Cardamon, coriander, cinnamon, cloves with a slight infusion of citrus and anise. The rum is smooth, long and well balanced. Black Bart Spiced Rum is best served over ice but is equally delicious with your favouritre mixer.

Husk Spiced Bam Bam starts as a 3-4 year old barrel aged Australian Agricole rum, which is infused with whole native and traditional botanicals to impart all natural spices. Roasted Australian wattle seed, native ginger and sun-dried orange and mandarin peel combine with golden berries, whole Tahitian vanilla beans and cinnamon quills to create a unique spice flavour rounded and balanced with a sprinkle of local sea salt. The result is a spiced rum good enough to sip neat. We recommend sipping Spiced Bam Bam on the rocks with a slice of fresh orange. If you prefer a longer drink, try it with ginger ale, tonic water or in a variety of cocktails.

Bolivar is a Latin-style premium rum blend with tropically aged Venezuelan rum and carefully crafted distillates of cacao and vanilla. Rich and smooth on the palate with notes of dark chocolate, creme brûlée, salted caramel & cappuccino, followed by an elegant finish of oak & cinnamon.

Appleton Signature is a flagship product of the Estate's Jamaica Rum Family. It is a Blended Rum, which means it is a combination of several rums of different styles and ages and does not have an age statement. Bundaberg Overproof Rum is distilled, aged, then bottled at strength for a bold flavour full of oak, caramel and spice. For a Bundy and cola with a bolder taste, take a highball glass, fill with ice, add 30ml of Bundaberg Overproof rum and top with cola. Garnish with a wedge of lime.
