The extracted juice, known as "mosto," then goes through a natural fermentation process. Unique wood and stainless steel tanks are utilized, and the fermentation is enriched by using leftover agave fibers from the tahonas. Native yeast is added to enhance the aromatic expression, resulting in a deeper and more nuanced flavor profile. The tequila is distilled in hand-built copper alembic pot stills of the highest quality. Don Julio Blanco Tequila is a true tequila connoisseurs blanco. It is bottled without being aged, but rather rested for a short time in containers to allow the spirit to settle and proudly delivers fresh agave characteristics. The nose carries light citrus aromas, whilst its palate is clean and crisp with some sweet notes of vanilla. The perfect base for a the ultimate margarita.
