Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. This Deep Wood wine displays ripe berries and cassis aromas with distinctive cedary oak and crush mint leave. On the palate, this Cabernet Sauvignon and Merlot blend, unfolds in the complex layers of red fruit with black olive nuances further enhanced by subtle savoury oak. The fine tannins gives it a great lengthy finish. A wine, which will be enjoyable now over dinner with family and friends. Or provided with an ideal cellaring condition, this Deep Wood Cabernet blend will blossom further up to five to seven years.

Cullen, world famous for their Diana Madeline Cabernet Merlot, have introduced another Cab Merlot, a distinguished offshoot of the Langton's classified Diana Madeline. Majority Cabernet Sauvignon blended with Merlot and touch of Petit Verdot gives the wine a luscious, bright cherry flavour with red berries playing their part. Aged in French oak, 40% of which was new, for one year. Delicious to serve with veal, lamb or beef today, but will also reward up to 10 years in the cellar.

This Forester Estate Shiraz has concentrated and lifted aroma of plum, white chocolate, spices, sandalwood like oak with some hints of violets; elegantly structured with a soft and rounded tannins on the palate. A very approachable style to enjoy with friends and family.

Margaret River Syrah is noteworthy because of its fragrance and attractiveness in its youth. Aromas of juicy black cherries and boysenberries with a grind of black pepper. The palate possesses a fine grained texture comprising of ripe tannin which adds to the structure and depth of the wine.White pepper, black cherries and an eastern mosaic of spices greet on the nose, brought to yield by a soft palate of fleshy tannin and coating red and black fruits.

An authentic style of Tempranillo with well resolved tannins and great length of flavour. Some new American oak maturation has imparted a rich toasty vanillin oak note to balance the spicy cherry fruit and earthy flavours of the variety.

A great Margaret River Shiraz with temperate ripening conditions promoting fruit intensity, richness and fine tannins. The palate is restrained and balanced with flavours of plum and aniseed spice.

The Sangiovese fruit was simply destemmed, chilled and pressed using only the free-run fraction of the juice. It was then fermented at moderate temperatures using as always solely indigenous yeasts. After fermentation it was matured for three months on gross lees to add additional texture. The Nebbiolo fruit was hand-picked and, after chilling, whole bunch-pressed directly to old oak for fermentation. This took close to six weeks, after which the wine received a further four weeks maturation in barrel. At this stage the final blend between Sangiovese and Nebbiolo was decided and the wine was emptied from barrel/tank, settled, filtered, sulphured and bottled in late July.We are super stoked with the final wine!!The texture and acid structure are highlights of what is likely a more approachable and fruit-forward release of Nocturne rosé
