Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish.

The Sangiovese fruit was simply destemmed, chilled and pressed using only the free-run fraction of the juice. It was then fermented at moderate temperatures using as always solely indigenous yeasts. After fermentation it was matured for three months on gross lees to add additional texture. The Nebbiolo fruit was hand-picked and, after chilling, whole bunch-pressed directly to old oak for fermentation. This took close to six weeks, after which the wine received a further four weeks maturation in barrel. At this stage the final blend between Sangiovese and Nebbiolo was decided and the wine was emptied from barrel/tank, settled, filtered, sulphured and bottled in late July.We are super stoked with the final wine!!The texture and acid structure are highlights of what is likely a more approachable and fruit-forward release of Nocturne rosé

This rarely seen straight Bordeaux varietal is one wine enthusiasts are gravitating to, and Margaret River appears a natural home for Malbec to thrive. A cooler, longer 2019 vintage meant our red wines showed supple, ripe tannins and full lengthy flavours, evident in the ultra-premium 2019 Evans & Tate Single Vineyard Malbec. From a small block on the family-run Carter Road Vineyard in the heart of Wilyabrup, this wine is a world-class example of how great Malbec can drink on its own. Two trophies and five gold medals are just a fraction of praise for this award-winning wine, matured in larger French oak puncheons (12% new) to ensure perfume and freshness are retained and a silky, dense and refined palate with textural complexity. Intense but delicate, the wine is fruit driven, juicy and super ripe, with a peppery flavour profile encompassing blueberry, dark plum, vanilla essence and chocolate and orange peel.

Margaret River is renowned for its premium Siraz wines. This example emanates from one of Wilyabrup's a multi star rated Halliday Winereis. The fruit was harvested in Mid-April when the skin tannins are ripe and the flavours are bold. The whole berries add some spice and complexity to the wine. Aromas of glazed plums, cloves and cracked peppercorns give way to a rich palate with hints of citrus blossom, oyster shell and vanilla pod compliment a long and complex finish, further exhibiting a bright fruit core and pure longevity of pristine tannin. The fruit is de-stemmed with no crushing of the berries so that we begin whole berry fermentation. The whole berries seem to add some spice and complexity to the wine. Our Shiraz seems to enjoy relatively cool ferments, plenty of aeration and gentle treatment. The wine is gently pressed of skins, near dryness, based on taste.The bubbly purple wine finishes its fermentation in the presence of mainly French oak, with the smallest portion of American oak. The wine is racked when it has finished its malolactic fermentation, and then once or twice more over the season based on its individual requirements. The grapes for this spectacular Best Blocks Shiraz were sourced from the Miamup Road vineyard. The fruit was harvested, crushed, and transferred to stainless steel vessels for fermentation. Post maturation in a combination of American and French barriques for 18 months, the resulting wine features a deep purple red colour. A swirl of the glass presents scintillating aromas of freshly cracked pepper, mixed berries, cocoa bean, spice and vanilla. Fine grained tannins integrate with the soft palate containing ripe red fruits and spices. The finish is elegant and lengthy. This delightful Shiraz can be enjoyed now, or within a cellaring term of eight years. It tastes excellent with char grilled porterhouse steak alongside mustard butter sauce and seasonal vegetables.
