With new winemaker Ollie Crawford on board, the newly labelled Devil's Lair Cabernet Sauvignon is 100% fermented in French Oak, 40% of which is new. The wine begins with concentrated cassis and redcurrant on the nose with hints of cedar and spice to give this classic red an imposing presence which continues on the palate with dense brooding flavours and French oak complexity.

Maturation in seasoned French oak gives a subtle background of vanilla and spice. Palate: Medium bodied and vibrant palate sums up this wonderful expression of Wilyabrup Cabernet. The palate is fresh and full of vibrant mulberry, cassis and black cherry flavours. Mature, ripe and fresh tannin drives the flavour to a long and persistent finish. Winemaking The fruit was picked on the 2nd and 24th of April showing excellent flavours and tannin maturity. Lightly crushed fruit was then placed to a static and open fermenter for period of fermentation with daily pump overs to ensure a moderate fermentation temperature and extraction of tannin. Once the desirable amount of flavour and tannin was evident the wine was pressed before being matured in seasoned French oak for a following 10 months before bottling.

Aged in French oak for up to 20 months. Totally opaque black dark red colour with a deep dark red hue. Pronounced aromatics of blackcurrant and mulberry infused with bay leaf greet the nostrils with cedary tobacco, dried herb and spicy black olive notes in tow. Medium bodied, rich red to blackcurrant and mulberry fruits meld into distinct cedary tobacco characters, dusty earth, subtle black olive and spice characters. Refined yet sturdy mouthfeel with graphite like tannins and long elegant aftertaste. Cellar 6-8 years. Alc. 14%

Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The juicy grapes used to produce Best Blocks Cabernet Sauvignon were harvested, and crushed into stainless steel fermenters. The juice obtained was pumped over and left on skins. This deep red-hued Cabernet Sauvignon showcases a brick red haze. The aromatic nose flaunts pleasing scents of ripe berries and dry herbs such as aniseed and sage. These fragrances make way for a rich and soft palate filled with concentrated fruit flavours and balanced tannins. This full-bodied Cab Sauv ends in an elegant, yet powerful and long finish. Made for consumption upon release, this mouth watering red wine has the potential to be cellared for six years. It tastes fantastic with mustard and herb crusted rack of lamb, served with sautéed vegetables.
