Our old tom style of gin is single shot distilled by hand using a traditional copper pot still. with a selection of queenslands finest botanicals weve created an old tom gin that marries the spice and earthen notes of juniper with sweetness from frankincence and myrrh, and refreshing hits of citrus from native finger limes.

Billy Goats, our Queensland Gin is a small batch, handcrafted using a unique selection of Old and New World Botanicals. We have combined Australian Wheat spirit with gently soaked Juniper, the freshness of Ruby Red Grapefruit, Lemon Myrtle and Native Australian Finger Limes for a vibrant citrus burst. We were looking for a very approachable Gin that had enough citrus for a refreshing burst, but also with enough subtle botanicals to give complexity and depth. Imbue distillerys inaugural gin - a smooth wheat-based spirit starring locally abundant, foraged botanicals from Melbournes fringe suburbs. Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.
