Four Pillars Modern Australian Gin
Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Plus, with all that spice it also makes a spot-on Red Snapper, so next time you feel like a better Bloody Mary try one with Four Pillars Modern Australian Gin instead.

A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

A secret recipe of adventurous spice & natural flavours that are expertly blended with fine Caribbean rum then aged in charred white oak barrels to create a taste and colour as rich as a pocketful of gold doubloons. Notes of rich natural vanilla, brown sugar, dried fruit, warming spices with hints of oak, come together to create a perfectly balanced spirit with a smooth finish. A grape vodka, produced from the low wines grown in our East Coast IronHouse vineyards, this traditionally distilled vodka is not for the light hearted. Although exceptionally clean with a dangerously moreish hint of vanilla and caramels, this vodka when taken straight from the freezer is the perfect accompaniment to any seafood, especially caviar or oysters. Delicate, yet exceptionally clean with a crisp creamy finish. In keeping with our environmentally sound ethos, the low wines from our vines produce the clean spirit, thereby minimising wastage and confirming the source quality.
Little Lon Distilling Co Ginger Mick
Lets raise this bounteous bottle to Ginger Mick. Legendary larrikin and official bluey of Victorian Little Lon - written into Australian poetry folklore by C.J Dennis in the early 20th Century. Would he have approved of this lordly libation? This nectar, with its bright bouquet of orange and grapefruit, its notes of ginger and juniper emerging tellingly on the finish. This bottle with his name on it? I ner met a botl tha dinae av me name o it. hed probably have said. Suitably impressed. Bright and crisp citrus notes, bursting with the sweet and sourness of ruby grapefruit. Ginger Mick is pleasantly smooth, with a hint of ginger to tickle the back palette. Best enjoyed neat and wonderful herod in a Negroni or a Gin Old Fashioned.
