A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Captain Morgan Spiced Rum
A secret recipe of adventurous spice & natural flavours that are expertly blended with fine Caribbean rum then aged in charred white oak barrels to create a taste and colour as rich as a pocketful of gold doubloons. Notes of rich natural vanilla, brown sugar, dried fruit, warming spices with hints of oak, come together to create a perfectly balanced spirit with a smooth finish. Best served in a tankard over ice, with cola and a slice of lime.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Lets raise this bounteous bottle to Ginger Mick. Legendary larrikin and official bluey of Victorian Little Lon - written into Australian poetry folklore by C.J Dennis in the early 20th Century. Would he have approved of this lordly libation? This nectar, with its bright bouquet of orange and grapefruit, its notes of ginger and juniper emerging tellingly on the finish. Bright and crisp citrus notes, bursting with the sweet and sourness of ruby grapefruit. Ginger Mick is pleasantly smooth, with a hint of ginger to tickle the back palette.
