Head Wilton Hill Shiraz Barossa Ranges Wilton Hill is comprised of an old vine vineyard, perched atop the Barossa Ranges as it encroaches on the Eden Valley. The soil, a complex polyglot of sandy loams, limestone and ferrous ironstone over a substrata of mottled quartz. The geology is arguably more intrinsic to the makeup of the wine than the variety, or maker Alex Heads deft hand. This is top- drawer Barossa Grand Cru speaking. Make no mistake! Think a swirl of dark fruits, aromas of iodine, lilac and violet, punctuated with a swab of tapenade-encrusted tannins. Dig deeper and there are scents of smoked meats, thyme, lavender and mocha, trailing across a peppery trail of freshness that tows this full-bodied wine long. Sumptuous gear that is ready for an aggressive decant, or extended time in the cellar.
Savaterre Shiraz
The Savaterre vineyard is elevated at 430m above sea level and is farmed along organic principles. No pesticides are used. An incredibly complex, lifted, lively and intense nose. Exotic aromas of smoked meats, dried red rose, allspice, clove, dark plum, dark cherry ,blackberry, mulberry, mandarin, violets, sandalwood, bay and funky undergrowth. This aroma really revs me up, it continues to evolve as time goes by. This wine is alive! Complexity, poise, sinewy acid, fine tannins wrapped around a sleek core of pristine dark fruit. A wine thats slightly reduced and smelling of undergrowth now that transforms in the glass and continues to seduce. This is Terroir. This is Savaterre.

THE STANDISH WINE COMPANY The Schubert Theorem Shiraz, Barossa Valley Dan Standish is indisputably one of the Barossas most celebrated Shiraz producers now. Joe Czerwinski has deemed him, the reigning king of Barossa Shiraz. An alumni of Torbreck, Standishs Shiraz expressions are outstanding expressions of a region defined by this wine. The Schubert Theorem is an appropriately powerful composition, made from vines planted over 100 years ago in the Vine Vale region. Standish himself likens The Schubert Theorem to the wines of the Northern Rhône. It is basket-pressed and aged in French oak for 30 months. Inky, deep purple juice is as intense as it looks. Rich Black Forest fruit and aniseed marry with spice, earth and dark chocolate on the nose. The palate is decadent and opulent, rich with juicy black fruits, plum and liquorice. This is a superbly concentrated wine, the structure showcasing exceptional fruit purity. The finish is incredibly long and powerfulif only it could go on forever.

Kilikanoon Attunga 1865 Shiraz
The grapes for Kilikanoon Attunga were obtained from some of oldest vines in the island country of Australia. The fruit is renowned for its intense flavours and its juice for the tremendous ageing potential. The small, thick-skinned berries were fermented and basket pressed to result in low yielding juice. The ferment was then matured for 27 months in large casks of French oak. This wonderful red wine was bottled unfiltered to preserve the character of the grape.
