The Honeybomb Semillon Sauvignon Blanc is a punchy and textural expression of a Margaret River SSB. It is very much in the Devil's Lair playground, experimenting with a small percentage of oak and lees work to add complexity whilst respecting varietal aromatics and purity. Defined by a mineral edge (quartz comes to mind) and muddled lime with a zesty line and salivating acidity layered with elements of starfruit and nashi pear like texture captured from a small barrel ferment component.Devil’s Lair senior winemaker Ben Miller’s enthusiasm for wine is extraordinary. Growing up in the Hunter Valley, he was encouraged to be adventurous, curious and hard working. It was playing rugby in many of the world’s winemaking regions, travelling and working through New Zealand, France, Spain, Portugal, US, Italy, Coonawarra, McLaren Vale and Margaret River that sparked a further love of wine. He’s now settled in Margaret River where he has the 'opportunity to work on the land and create something that speaks of its place'.

On the nose, intense gooseberry and tropical fruit aromas of the Sauvignon Blanc are balanced by herbaceous and freshly cut grass of the Semillon. The palate of this Houghton wine is refine with a length balanced crisp finish.

Early Harvest wines are created from selected parcels of flavour ripe grapes harvested from early ripening regions in South Eastern Australia. This fruit, coupled with careful winemaking, creates a uniquely refreshing wine which is at least 25% lighter in alcohol and calories. Direct input from Forester’s viticulturist ensures well balanced canopies and crops are grown for the ripe style desired. The 2022 vintage was a mild year for white grapes in Margaret River, allowing plenty of time during January and February to ripen the fruit to our specification. Winemaking - Modern white winemaking techniques are employed in the production of the Semillon Sauvignon Blanc, with temperature control considered critical from the moment the fruit reaches the winery. The fruit is destemmed and crushed, then must chilled and pressed off skins in a very short space of time. The clarified juice is then racked to a fermentation tank. A range of specially selected yeasts are employed on different parcels of fruit and the resulting dry tanks of wine are carefully blended to maintain the Forester Style.

Fresh tropical and passionfruit aromas and flavours are well supported by a dry crisp, acid backbone.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Hints of vanilla bean and a refreshing acidity on the finish mean this decade old wine will continue to live in the cellar for many years more.
