Kilchoman Special Release Casado Single Malt Scotch Whisky

Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occur in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration. A limited-edition single malt from Kilchoman, Casado takes its name from the Portuguese word for marriage. Initially matured in 38 first-fill ex-bourbon barrels, it was then married in a pair of Portuguese red wine vats for two years before it was bottled. On the nose bonfire smoke with dried apricot, Dr. Pepper, and some coastal salinity as well notes of marzipan and toffee apples underneath. On the palate black pepper is cracked over smoked fish as well as lemon peel, tannic wood and stone fruits. There's a sweet jammy element present throughout. The finish is aromatic spices and red berry tartness that linger.

Kilchoman 100% Islay Single Malt Scotch Whisky (12th Edition)

Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occur in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration. The Kilchoman 100% Islay 12th Edition from Kilchoman distillery was matured in 29 bourbon barrels and 6 oloroso sherry butts for a minimum of 8 years. Once harvested, the barley was hand malted on the Kilchoman malt floor, and gently turned twice daily by the maltmen as it germinated. The green malt was then smoked using peat cut from the Cnoc Dubh peat banks, the thick peat smoke permeating each barley grain, creating the distinct smoky Kilchoman character, landing around 20PPM. Once distilled in Kilchoman's unique pot stills, the new make spirit was filled into casks and stowed in dunnage warehouses at the distillery. The nose is elegant, sweet peat smoke, followed by waves of citrus and honey, finishing with notes of vanilla and salted caramel. A Bourbon-driven 100% Islay brings an initial malt-driven profile followed by green fruits; apple and pear. Light spice, raisin and toffee are present towards the finish. Peat smoke returns and remains on the palate. The oily texture of this 100% Islay allows for a creamy profile balanced with toffee and caramelised sugar.

Kilchoman Small Batch Single Malt Scotch Whisky

Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occure in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration. This small batch vatting combines bourbon and oloroso sherry matured Kilchoman with specially selected shaved, toasted & re-charred (STR) red wine casks, bottled non-chill filtered at natural cask strength at 48.7%. A combination of 75% Bourbon, 20% red wine and 5% sherry casks. The result is a marriage of classic Kilchoman citrus and peat smoke with layers of red fruits, cinnamon sweetness, and fresh vanilla. The nose is classic Kilchoman citrus-sweet notes and warming peat smoke balanced alongside elegant yet rich fruit-forward tones. On the palate flavours start with toasted oak before they make way for raisin and fig, with a rich nuttiness. Th finish is lingering maritime peat smoke is matched with an abundance of spice and nutmeg.

Named after a famously dark and peaty loch overlooked by the distillery, Loch Gorm is a sherry cask single malt matured exclusively in oloroso casks, extracting the rich spicy character of the European oak as it ages in Kilchoman's Islay warehouses. All Kilchomans casks come from the renowned bodega, Jose Miguel Martin. It is common for distilleries to use a variety of sherry producers but for consistent quality and character, Kilchoman purchase them all from just one bodega. The 2023 edition of Loch Gorm features whisky from a parcel a total of 22 casks, matured for a minimum of 8 years. 8 of these casks were distilled in 2013, 6 distilled in 2014, and 8 distilled in 2015. A combination of sherry butts and hogsheads are used to provide 2 different styles of maturation. These ex-oloroso sherry casks impart a combination of heavy sherry notes, spicy dark chocolate, rich fruits and burnt sugar. This balances beautifully with the Kilchoman peat smoke and citrus fruits found within our farm crafted spirit. The nose has hints of cacao with an essence of leather, black cherry and light smoke. On the palate flavours of roasted hazelnuts, dark chocolate and roasted dark fruits give way to light ashy peat smoke with a long balanced finish with a fresh Islay sea breeze.

Kilchoman Sanaig Single Islay Malt Scotch Whisky

The Kilchoman Sanaig Single Islay Malt Scotch Whisky presents soft cooked fruits with caramel and vanilla on the nose along with toffee, peat smoke and a lingering sweetness on the palate. The finish is a lovely balance of peat smoke, fruit and sweetness.

Established in 2005, Kilchoman (pronounced Kilhoman) is one of the smallest distilleries in Scotland. Based on a farm on the rugged west coast of Islay, Kilchoman is the first distillery to be built on the Island for 125 years.
