We pass alcohol vapour through a mixture of juniper and hop, creating a perfect fusion of flavours. Our classic Small Batch flavour with a delicate but rich hoppy nose and a long smooth finish.

A grape vodka, produced from the low wines grown in our East Coast IronHouse vineyards, this traditionally distilled vodka is not for the light hearted. Although exceptionally clean with a dangerously moreish hint of vanilla and caramels, this vodka when taken straight from the freezer is the perfect accompaniment to any seafood, especially caviar or oysters. Delicate, yet exceptionally clean with a crisp creamy finish. In keeping with our environmentally sound ethos, the low wines from our vines produce the clean spirit, thereby minimising wastage and confirming the source quality.

The Craft & Cos Collingwood Dry Gin is an ongoing conversation with the seasons. We are always juniper forward, true London dry style, with native and traditional botanicals.

Hand-crafted using a combination of locally sourced Riverina citrus, and traditional botanicals, our Dry Gin Murrumbidgee is inspired by the Riverina, New South Wales, the food bowl of Australia. This is the first Gin to be released in Griffith, New South Wales it is wonderfully balanced and juniper-forward, with heavy notes of citrus. A slight hint of the dryness to the palate initially, followed by refreshing citrus presence of New South Wales kelp among our list of botanicals.

Bundaberg Red is the first Rum to be filtered with Red Gum. Bundaberg Red has been crafted to deliver an incredibly smooth taste while retaining the unique character for which Bundaberg Rum is famous. Four Pillars Gin worked with the QANTAS Rockpool mixology team to create the second release in their Bartender Series - an Asian-inspired Modern Australian gin with softness and spice, one that is truly a spirit of Australia. Red and green Szechuan give it a lovely warm mouthfeel, while the macadamia nuts give it softness and an almost creamy palate. The fresh Rose Glow apples, fresh tangelos, fresh grapefruit peel and dry native quandong add fruit and lift. Rockpools bartenders were aiming for a gin with nice spicy complexity and mixability something to create a great G&T, or classic dry martini. Platinum Cane Spirit is made from sugar cane syrup and boasts fresh, light hypnotic elements resulting in an sensory tactile experience. For complete clarity the distillate is filtered through Cairns Tablelands volcanic rock.
