Archie Rose Single Malt Whisky is distinctly crafted to highlight six malts, each with a unique profile and character. This six-malt mash bill, although incredibly low yielding, provides a rich and expressive flavour, full of distinct regional character.Matured predominantly in 100, 200 and 300-litre Australian Apera (Sherry) casks, complemented by a selection of Ex-Bourbon and Archie Roses own 36-month air dried Ex-Rye Casks, each coopered with a specific balance of both char and toast.The natural sweetness of these casks complements the savoury charisma of the spirit, revealing fresh herbs, shortbread biscuits, raisins, toffee and dark chocolate on the nose. Meanwhile, the palate is luscious with well-integrated flavours of sticky date pudding and amaretto with a final note of espresso.

Hobart Whisky Signature is a marriage of small carefully selected American oak ex-bourbon casks. A satisfying light ex-bourbon cask single malt that delights with a solid malty foundation, some gentle spice and a long, complex finish. Tasting Notes: Nose Freshly baked apple pie with cinnamon, raisins, sweet crust pastry and vanilla custard. Palate Marzipan icing with hints of vanilla bean over malty and clean oak foundations. Fizzy sherbet overtones lend this classic bourbon cask dram a lovely zing and brightness. A couple of drops of water serve to sweeten the sensation and open some subtle floral tones. Finish Long and clean with a lingering semi-sweet sherbet fizz with hints of almond providing a very pleasant semi- dry conclusion.

Nestled amongst coastal rainforest in the Byron Bay hinterland, our terroir is uniquely influenced by the powerful Pacific Ocean. 'The Original' is matured in American oak ex-bourbon casks and is a whisky true of its natural environment. The colour of a Byron Bay sunset. “I really thought I had an original idea, alas, no. Saffron gin has been done before in France. I think the Brocken Specter Summer Gin is the first Australian saffron gin we use 100% Tasmanian grown saffron and never add any coloring. For the base we combine 16 aromatics including juniper, coriander seed, lemon myrtle, strawberry gum, star anise and vanilla bean. This mix is added to a grape based spirit and left over night. This spirit/aromatic base re-distilled, after at full strength we add the saffron. After a few days the saffron stamens are completely white and simply strained out. The gin is gluten free, vegan and unfiltered. Try a summer gin with good tonic, fresh chilies and thyme!”
