The crucial mix of attitude, insight, native and exotic botanicals, pure Australian water and innovative distilling process define this hand-crafted Gin. Distilled in small batches in a custom built 230L Müller copper still, fresh ruby grapefruit, native aniseed myrtle, cubeb pepper and tonka beans are used to create this Gin. A smooth, well-rounded Gin for making classic cocktails and controversy. Perfect in a G&T with a ruby grapefruit garnish, and holds its own in a martini or negroni.

In the glass: Fine straw yellow with a very slow release fine bead. On the nose: Nectarine and peach over hazelnut with leesy richness. On the palate: Intense and elegant with white peach and white strawberry umami plus fine elements of flint, struck match and velvety roundness under a bright, racy frame of acidity. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. Tasmanian style Pommeau! Charles Oates is making a beautiful Pommeau considered a Mistelle. An aperitif inspired of the traditional Pommeau de Normandie. Delicious marriage between Apple brandy and freshly pressed tannin-rich apple juice, Pommeau combines intensity of flavour, sweetness and gentleness. Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.
