With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

Become enticed by the vibrancy of Meadowbank Pink Gin. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.
