Dalrymple Vineyards was established in 1987. Situated in the heart of the Pipers River region of north-eastern Tasmania, almost equidistant from Launceston, Scottsdale and George Town. Dalrymples own vines are planted on sloping hills that overlook Bass Strait, and they also have access to vineyards in other parts of the State. This Single Site Pinot Noir comes from the Coal River Valley, just outside Hobart.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

Highlands is a refreshing and crisp Gin, with notes from the unique blue cypress to the bright fruitiness of the grapefruit, orange and buchu, all while an ever present mint note lingers over the palate. The sweet earthiness of ginger, cubeb pepper and grains of paradise add a gentle bite of piquancy while chamomile provides weight and sweetness. Poltergeist Gin is produced in small batches at the historic Shene Distillery in Pontville, Tasmania. Poltergeist Unfiltered retains the full flavour profile of all twelve botanicals, completely covering the front, middle and back of the pallet with a long lingering finish. It may ghost over ice due to the density of flavouring oils derived from the botanicals. The flavour profile is earthy and robust, and the balance of brawny botanicals like liquorice root, cardamom, orris root and Tasmanian pepper berries, with the more traditional citrus and nutty gin flavours, is unique. Drink it straight over ice, in a classic martini or a negroni.
