We're really pleased by what we now find in the glass a fine, elegant, luxurious sparkling wine that is rich and complex in aroma and flavour, yet still retains the fundamental verve and freshness of the authentic non-vintage style. Its cool Tasmanian origins are as clear as a bell. The palate carries our region's Chardonnay-driven crisp, citrusy acidity which helps define the wine's classic structure and food-friendly character.

Derwent Estate Calcaire Chardonnay offers a complex bouquet of lime, nuts and gentle spice. This modern style of Chardonnay offers a creamy palate of citrus fruits and white pears enhanced by hints of butterscotch and fine grained oak. The finish is clean and marked by citrus flavours.

36 Short Rhubarb Gin. Made with South Australian Rhubarb, grown for Virginia Spirits. A delicately smooth gin enhanced with a distinctive floral and rhubarb bouquet giving it a crisp and refreshing finish to the palate.

Locally sourced, Hippocampus vodka is distilled in Western Australia. The vodka is twice distilled and not filtered, which lends a smooth richness and subtle flavour. Its full body and depth mean it lends itself well as a cocktail base.

In the glass: Fine straw yellow with a very slow release fine bead. On the nose: Nectarine and peach over hazelnut with leesy richness. On the palate: Intense and elegant with white peach and white strawberry umami plus fine elements of flint, struck match and velvety roundness under a bright, racy frame of acidity. Deliciously mouth-watering and crisp yet so flavoursome.

Triple Distilled.OCD vodka runs through a process that yields only to time, with longer than normal fermentation periods to allow the development of a deep, rich flavour profile.The distillation process then pulls back the layers, to allow for a smooth tasting liquid. A final filter to ensure that only the best is allowed to leave the bond, bottled with a wax seal to ensure quality.Using grain from the Riverina, the Vodka is developed from the same fermentation process as OCD Whiskey, which is reflected in the flavour and character filled taste of OCD Vodka.Triple distilled and then run through a custom made filter, the liquid is then bottled in bond, ready for the final lucky ones.Aroma: A warm and toasty fragrance of malted barley, cereal grains, roasted almonds and aromatic oils.Tasting Notes: An initial burst of grainy sweetness followed by a long and warming finish, with notes of butterscotch, star anise and bush honey.
