Tasmanian style Pommeau! Charles Oates is making a beautiful Pommeau considered a Mistelle. An aperitif inspired of the traditional Pommeau de Normandie. Delicious marriage between Apple brandy and freshly pressed tannin-rich apple juice, Pommeau combines intensity of flavour, sweetness and gentleness. Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.

Crafted with the same quality and skill as the premium liquid, the classic is reduced in ABV and contains the classic London Dry base of Juniper and Coriander with Angelica Root, Cardamom and Lemon Myrtle. With this wine, we considered it mission accomplished! Vanilla, nougat and exotic spices on the nose, followed by a palate bursting with lychee, truffle and cinnamon flavours, this is a complex, elegant wine. Australian sparkling has come a long way in the past decade, but this is a wine that really excites us.

With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

Knocklofty 'Garden Party Gin' is made with seasonal, surplus berries from the Westerway Farm (Tasmania). The berries are steeped in the gin to provide a unique, natural taste.
