Ilegal mezcal is a beautifully balanced vintage mezcal from Tlacolula, Oaxaca Mexico. It is made by a fourth generation Mescalero and his family using 500 year old methods. Ilegal joven mezcal is a perfect balance of espadin agave and light smoke. Deep agave aromas. Hints of baked apple and white pepper. Lingering heat and sweet agave throughout.

Calle 23 is a highland tequila from Jalisco. Its creator, French-born biochemist Sophie Decobecq, distils each expression separately (Blanco, Reposado, Aejo) to its own special recipe. Her tequilas are double-distilled and she uses Bourbon casks from Kentucky. This anejo tequila is aged 16 months. It features a very satisfying agave rich palate featuring salty and buttery vanilla garnished with oaky smoke.

Aged 12 months in a blend of French, American and Mexican Oak

About 10 years have passed since the blue agaves in this tequila first stretched their leaves towards the hot Mexican sun, can you imagine? An agave must grow for 8 to 10 years before it can be harvested for tequila production. This is followed by the cooking process and then fermentation, which in turn takes several days.
