CLOTILDE DAVENNE Chablis Vieilles Vignes Chablis is a superb winegrowing region entirely dedicated to Chardonnay. Clotilde Davenne Chablis comes from the village of Courgis, right next door to her winery in Prehy. Pale in colour with hints of green, the Chablis Vieilles Vignes offers a nice freshness and aromatic nose of fresh fruits, white flowers and dried fruit. The mineral aromas, of flint in particular, make it sing.

Whilst Chavys have been living in Puligny Montrachet for over 200 years it was not until 1986 that Gerard Chavy started to estate bottle his own wine (previously the wines were sold to negotiants). This Chardonnay by Jean-Louis Chavy is based on 20-60 year old vines. Woodlands, established in 1973, has emerged as one of the regions important producers of Cabernet Sauvignon. The original, dry-grown 3.2 hectares, planted between 1973 and 1976, has now expanded to 10.5 hectares. The sandy and gravelly red/brown loams over lateritic sub-soils are well suited to Cabernet Sauvignon. Organic and biodynamic principles are gradually being introduced. Batch-vinification in open and closed, stainless-steel fermenters with minute parcels of Malbec optimises fruit complexity. Typically the wine shows cassis/ black fruit/ cedar aromas, fine-grained tannins and underlying savoury oak.
