Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

Ooray Native Plum Gin is a colour take on the Botanic Australis recipe, with heightened addition of strawberry gum to compliment the rich Ooray (Davidson's Plum) flavour. the gin is steeped on Ooray Native plums to achieve a truly Australian experience. On the nose vibrant strawberry gum and sherbet with a rich and velvet plum jam, raspberry sorbet palate. Great with a splash of soda.

Distilled by Brogan herself, Everyday Salvation Gin is her Australian twist on the classic dry gin we all know. Packed with botanicals it is juniper forward with the crispness of fresh organic white grapefruit peel balanced against Australian cinnamon myrtle and native pepper berries results in a modern versatile gin great for any occasion. Tasting Note A Juniper forward punchy Australian Dry style gin. The dry citrus hit of coriander seeds is accentuated by organic white grapefruit peel, providing fresh zesty qualities of citrus with subtle hints of bitter lemon. Floral top notes of lavender, rose and orris root, with earthy undertones from angelica root presenting on the nose. The Australian native botanicals of sweet strawberry gum and hot pepper berry linger on the finish which is elongated by the nuttiness of roasted native wattle seed.

The wild bush lemons on Lord Howe Island descend from the fruits of the early settlers. They were planted to help sustain them during the long periods between passing ships. They have a unique enveloping aroma, but beware the thorns! In the days of ships and flying boats, a tradition on Lord Howe Island was to throw flower leis into the water from departing launch boats. And its making just as big an impact 140 or so years later, capturing all the glamour and excitement of New York City in a glass. The Manhattan has stayed true to its origins, mixing American Rye Whiskey, Sweet Vermouth, and traditional Angostura Bitters. During Prohibition (19201933) Canadian whisky was primarily used because it was more readily available. Just like its namesake, and the people who call it home, it has survived wars and prohibition, recessions and depressions. Serving Suggestions:To serve, pour Dr Onyx Manhattan into a mixing glass filled with ice, stir well, then strain into a chilled cocktail glass or in a short glass over ice. Garnish with a cherry or lemon peel.

Pepper famed bourbon distiller, who then introduced it to New York high society during his frequent visits to the Waldorf-Astoria Hotel bar in New York. They clearly embraced it, given how the infamous Mad Men had such a taste for it 80 years later in the 1960s Manhattan advertising scene. The Old Fashioned has had a makeover or two over its time. But this smooth, bitter, sweet simplicity of Bulleit Straight Bourbon Whiskey, traditional Angostura Bitters, and sugar cane syrup is a tonic that Don Draper himself would approve of.Serving Suggestions:Serve Dr Onyx Old Fashioned gently swirled in a short glass over ice, with a twist of orange zest. Pinch the zest so the oils spray over the drink before dropping it into the glass.

This is Australia's first premium Absinthe - Multiple distilled spirit with added Australian Botanical infusions. It presents with a mix of Aniseed and Lemon Myrtle, China Aniseed, Elderflower, Gentian, Fennel seed, Hyssop and of course the infamous Wormwood.Absinthe is traditionally drunk diluted, and there is no more lavish and beautiful way to dilute the drink than with an Absinthe fountain.
