Introducing our Oyster Shell Gin. Developed in collaboration with society restaurant in Melbourne, this is a unique flavour expression of the Australian coastline. The Never Never team uses Kangaroo Island oyster shell, waxflower, Tasmania wakame, coastal daisy bush, saltbush and round mint to create a unique expression of the Australian coastline and built for contemporary seafood pairings. Fresh sea spray jumps from the glass, bursting with split lime-leaf and fragrant grapefruit zest. The palate expresses saline and savoury minerality of Kangaroo Island Oyster shell and dried Australian wakame. Native greens integrate with morish salted citrus, pine and coriander spice on the mid-palate. The finish is long and luxurious, lending itself to dry martinis.

Inspired by the flavours of South East Asia, fresh makrut (keffir) lime leaves, ginger, lemongrass and kumquats alongside more traditional ingredients such as juniper,coriander, angelica and orris are used in the distilling process. To create this Raspberry gin, whole Raspberries were added to the finished Gin to macerate for 7 days providing a vibrant pink hue and luscious Raspberry character. Alongside more traditional botanicals, strawberry gum and earl grey tea were distilled to complement the raspberries. The wild bush lemons on Lord Howe Island descend from the fruits of the early settlers. They were planted to help sustain them during the long periods between passing ships. They have a unique enveloping aroma, but beware the thorns! In the days of ships and flying boats, a tradition on Lord Howe Island was to throw flower leis into the water from departing launch boats.
