Located high in the Japanese Alps in Nagano Prefecture, the Mars Shinshu distillery has beer brewery Minami Shishu Brewery as its neighbour. Both the whisky distillery and craft brewery use pure mineral water from the mountain in their facilities and production. Whisky maturation is encouraged by short hot summers, with long cold winters providing a slow and gentle maturation and a break. For the 2020 release of the Mars Komagatake IPA Cask Finish Single Malt Japanese Whisky, traditional oak barrels were used for the 3 year maturation. Following this, the single malt is aged further in casks used for the production of Indian Pale Ale. This provides a subtle and unique essence of beer character.

Aromas of toasty butterscotch toffee and malt with notes of roasted almonds, Rich fruit cake and plum pudding. A thick, oily, oaky palate with dried fruits and dark chocolate. The dram builds across the palate to a big, full and zesty peak. The finish is long, warm, and comforting with clean dry and lingering spiciness. Takes a little water very well with more viscosity and marzipan notes developing as it rests in the glass.

Sixteen years of maturation in American Oak casks brings an abundance of vanilla spice and warm honey notes. The finishing in Pineau casks brings energizing grapefruit, geranium, glazed fruit and ginger. This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials. The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and pealed apple skin. On the palate there is an energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger, with a refreshingly concise finish.

In ancient times, the land around I-Lan in Taiwan was called Kavalan, a mysterious land that was solely inhabited by the indigenous people of the Kavalan clan. The name was officially recognized by the Emperor of the Chin dynasty in the year of 1809 when the original city was also built under the same name. Kavalan had always been kept primitive and protected from the outside world by the Syue-shan mountain range which is abundant in high quality natural water that comes from deep within the mountain range. The mists of Kavalan and the spirits of the past have been created for you in this exquisite whisky. The process water is drawn from the springs in the Snow Mountain and Central Mountains imparting a smooth and creamy mouth feel to the whisky. Madeira is a rich fortified wine made on the Portuguese Madeira Islands, where the wine is aged and oxidized through heat. Kavalan’s tropical new make extracts the many rich fruit notes from the wine cask to create an irresistibly sweet yet delicate whisky. This cask of Solist Madeira, cask number D150514027A, was chosen and bottled exclusively for Australia, with only 211 bottles released.

Approximately 30-34 bottles produced per batch and bottled at cask strength. On the nose are classic oloroso sherry cask, offering a rich and sweet-spicy flavour. Big and fruity palate with nuttiness, it speaks with Authority. A white pepper, oaky, and long finish.

Not strictly a Japanese whisky, Togouchi source grain whiskies from Scotland & Canada and aged them in Japan. This is a blend from Chugoku Jozo, who mature their whiskies in a tunnel rather than a warehouse. The temperature of the tunnel is always 15 degrees while the temperature of the cellar at the headquarters in Hatsukaichi city is a little higher than that. Nutty, spicy whisky with a lovely butterscotch mouth feel. On the palate it expresses vanilla sweetness and a fine peat iodine, with hazelnuts and chocolate on the finish. Almost feels like a whisky/bourbon hybrid.
