Four Pillars sourced olive leaf and olive oil from Cobram Estate, in northern Victoria after visiting Cobram Estate during olive harvest. Using olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. This gin is savoury, textural and bright. Perfect for any Martini Gibson, dirty, or dry with a twist. Four Pillars Spiced Negroni Gin is an aromatic, rich and spicy gin with great power and intensity. First, they take the base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then the addition of an exotic West African spice called Grains of Paradise. Although powerful, the spice tends to glow rather than become hot. Beautiful organic blood oranges are one of the last additions to the botanical basket, as well as some ginger. These wonderfully fragrant fresh botanicals help lift the spice to another level.

The Gospel Straight Rye Whiskey is made from 100% Australian Mallee Rye, grown in one of the driest regions of the driest country in the world. We use 100% rye mash - double distilled and then aged for at least two years in new American Oak barrels in Melbourne, Australia. Full flavoured Rye, fresh baked rye bread on the nose, caramel and spice on the pallete.
