STELLA BELLA WINES Cabernet Sauvignon, Margaret River

Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub region and north to Wildwood Rd in an endeavour to capture ripe fruit flavours, supple tannins and the distinctive perfume of Margaret River Cabernet Sauvignon. A deep and inviting black cherry colour with floral notes of violets and fruity, doughy aromas of just baked blackberry muffins. The palate is soft, inviting, and full of free range forest fruits, vanilla, cocoa and loads of supple, fine tannin. Such a pleasure to drink now but with ample ripe tannin structure to allow for aging up to 5 years.

It’s big and brooding. Think: blackberry compote, blackcurrant liqueur, charred herbs, dark chocolate. Rich cassis and plum jam, framed by cocoa and roasted spice. But it’s not just a fruit bomb—there’s a savoury edge too: dried thyme, graphite, and the iron backbone of old-school Cab. The skin contact gives tannins that are both fierce and finessed—grippy, chewy, and begging for meat or time.

Vibrant, deep purple/black with a dense purple rim. A potently perfumed, layered wine that showcases the essence and class of Margaret River Cabernet Sauvignon. Cassis, black olive and dried herb with tobacco leaf, redcurrant and floral notes. An underlying nuance of cedar and lightly roasted spices from maturation in well-seasoned French oak hogsheads (300L). The palate is seamless and fine with tremendous length and intensity of flavour. It has a lovely savoury tannin grip that Margaret River Cabernet Sauvignon is renowned for.

Woodlands Cabernet Merlot is one of the regions best examples. The Watson brothers are the custodians of a family heritage in Margaret River that continues to this day. The Cabernet Merlot has attractive and complex aromas of dark berry and plum supported by well integrated vanillin oak. The palate shows similar characters with outstanding length of flavour and perfect balance. Drink now or cellar short term.

Margaret River is renowned for its premium Cabernet Sauvignons. This example emanates from this multi star rated Halliday Winery in the Yallingup Sub-Region. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
