STELLA BELLA WINES Cabernet Sauvignon, Margaret River

Always regarded as one of Margaret River's favourite wineries due to the inherant quality. Forester Estate seems to marry beautifully with their value-for-money philosophy. This Cabernet Merlot continues to win wide acclaim due to its dark purple colour and its lifted aromas of raspberries and black forest cake. Rich berry flavours are well balanced by a tight tannin structure typical of quality Margaret River Cabernets. The other great bonus is the ability of this great Cab blend to morph into a true cellar star.

A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. Every now and then we stumble across little gems such as this, that simply scream class and most importantly just delicious drinkability. Master Margaret River winemaker, Cliff Royale, has done it again with this superb new release. The fruit is sourced here from three regional sub districts and matured in old French oak for roughly 12 months. It's a brilliant drink right now, soft in structure with a pristine fruit profile, particularly with the likes of chargrilled lamb chops.

A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Wonderful garnet red colour showing aromas of red and blackberries and cedar on the nose. Rich forest fruits and licks of vanillin oak on the palate. Hand plunged in open topped fermenters, with nine months in seasoned French oak barriques.
