Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. The synergy between region and variety is on full display here with this powerful Margaret River Cabernet from Allegiance Wines, which will continue to soften in the cellar.Mid garnet with a brick hue. Clean and lifted ripe berry fruit with integrated oak giving depth and complexity. Ripe, youthful and plush with integrated charry oak, rich cassis fruit and silken tannins on the well-balanced and persistent finish.

Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.

Frankland Estate Olmo's Reward, named after Dr Harold Olmo who first identified viticultural potenital of the isolated Frankland River region, is an elegant blend of Cabernet Franc and Merlot and small components of Malbec, Cabernet Sauvignon and Petit Verdot. The concentrated palate has fine grained tannins, dark chocolates and savoury earthy notes leading to a generous and long finish.

Aromatics of blackberry, mulberry and dried herbs followed by a palate chocked full of sweet black fruits, dark chocolate and spice. Fine French oak tannins carry flavours to a savoury finish.

Medium crimson red with a slight purple edge. A generous combination of lifted forest berry fruits, cassis, and dark cherry fragrances upfront with underlying black olive and blackcurrant nuances. Subtle sweet cinnamon oak spice, violets and savoury dried herbs adds a further depth of complexity. Medium to full bodied wine with elegant, well integrated red berry fruit flavours fill the palate followed by a succulent, fleshy but firm tannin structure. Juicy red berry fruit flavours persist endlessly with a hint of dark chocolate mocha on the finish.
