Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over. Clean and lifted ripe berry fruit with integrated oak giving depth and complexity. Ripe, youthful and plush with integrated charry oak, rich cassis fruit and silken tannins on the well-balanced and persistent finish.

Vibrant in the glass deep purple with bright red edges. The nose is complex and expressive. A mix of red, blue, purple fruits the blend of varieties reflected in the broader spectrum. Oak though present is not imposing itself. Remarkably fragrant. Savoury notes in the tobacco and cedar zone add interest. Complex structure and great length created by the blend of varieties, a wine to try now but also one to cellar.

Machine harvested at night , crushed and de-stemmed, pressed to French oak (25% new and the balance in staves) for 12 months. This is classic cooler climate Shiraz with beautiful perfumes on the nose and lovely fleshy fruit flavours on the palate, the tannins are soft and generous combining to give the wine a well structured finish.
