VINTAGE The longest vintage many have experienced with late ripening due to the cool climate conditions in Margaret River. A mentally challenging year, where patience and hard work in the vineyard was rewarded with beautifully concentrated fruit.

Vibrant, deep purple/black with a dense purple rim. A potently perfumed, layered wine that showcases the essence and class of Margaret River Cabernet Sauvignon. Cassis, black olive and dried herb with tobacco leaf, redcurrant and floral notes. An underlying nuance of cedar and lightly roasted spices from maturation in well-seasoned French oak hogsheads (300L). The palate is seamless and fine with tremendous length and intensity of flavour. It has a lovely savoury tannin grip that Margaret River Cabernet Sauvignon is renowned for.

A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. A fine balanced wine, with a long palate that shows finesse.Ø WINEMAKING Each parcel of fruit is gently crushed and transferred into small open fermenters. Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
