Howard Park Leston Cabernet Sauvignon, a wine of good structure and power. Bright red crimson in colour. Red currant fruits, a hint of violets and oak on the nose. This full bodied wine had great elegance on the palate and a lengthy finish. No doubt one of the best example of the region.

A deep crimson red which opens with the classical Margaret River nose...fresh varietal notes of bright berried fruits, briar and sea spray, followed by wafts of chocolate and mocha with subtle spiced oak aromas. A medium to full bodied palate shows cassis and Satsuma plum characteristics, leading into the sweet mid-palate depth of chocolate and mocha, finishing with defined talents. The wine is elegant and shows great length of flavour and well-structured palate line. 'Pure and fragrant, expect a nose layered with cassis, blackcurrant, leaf and dusty spice rack spices, while in your mouth it's pure, beautifully structured, fine and dry. The fruit is sourced here from three regional sub districts and matured in old French oak for roughly 12 months. It's a brilliant drink right now, soft in structure with a pristine fruit profile, particularly with the likes of chargrilled lamb chops.

Before fermentation starts the juice is concentrated by removing 15% of the volume. This facilitates a greater intensity of flavour. Heading down boards keep the cap submerged for better skin contact. The fermenters are temperature controlled to provide optimum conditions. Gentle extraction is achieved by the draining of wine from the skins and returning back over.
