You can enjoy the rich taste of cedar and cypress harvested in the area where Kumano Kodo is a World Heritage Site. Mainly uses “Kishu sugi (cypress)” and Kishu Kumano hinoki(cedar)” which are famous as “Kishu wood”, and uses juniper berry as the base of the aroma of gin. The fragrances of the three materials contain a lot of ingredients called “”alpha pinene”” and deepen the fragrance of each other. At first, the scent of Japanese cedar rises, and when you put it in your mouth, the calm and thick scent and flavor of Japanese cypress spreads a little later. Koyamaki and juniper berry’s flavor which both of them contain a lot of “α pinene” ingredients, so they are very compatible with each other. “expanse” and “abundanc e “of the KOZUE’s flavor are born from here. Added Mandarin orange peel made in Wakayama, it feels soft and fresh scent were mixed when tasted by drink, and makes good tast e. Nakao Jozo Maboroshi Daiginjo White Box
Loved since its creation in 1978, our Ginjo Maboroshi Shirobako takes on a more refined character, released now as Daiginjo Maboroshi Shirobako. A daiginjo-shu brewed with yeast extracted from the skin of apples, the rich aromas add volume to the cooling sensation and flavor, leaving an overall refreshing impression. All our specialty sakes made with the original techniques developed around brewing with apple yeast have been crowned with the name “Maboroshi”.
Chiebijin Junmai Daiginjo Yamada Nishiki
This Junmai Daiginjo with 35% polishing ratio, the highest peak of the “Chiebijin” series, is named after the family’s proprietress, Chie, since its founding in 1874. The aroma is reminiscent of fresh Koyho grapes, and the juicy, gentle flavor and refreshing acidity are beautifully balanced.
Hombo Shuzo Gensyu Yakusugi Shochu
Hombo Shuzo Gensyu Yakusugi Shochu is crafted on the UNESCO heritage listed island called Yakushima south of Kyushu. Climate is very tropical and has beautiful clean soft water. It shows sweetness on the nose like mandarin, honey and fresh yoghurt. It has soft texture and is powerful impression at first followed by cleans sweet flavour with wonderful complex. In summer, enjoy this Shochu straight or over ice, or cold spring water. In winter, Shochu can be gently warmed or with a quality green tea.
Okayama Craft Gin Sakura Finish
Okayama Craft Gin Sakura Cask Finish is distilled using rice shochu as a base plus a blend of more than a dozen classic botanical including coriander, lemon peel, juniper, lavender, and orange. Unique to this gin is the Okayama region famous Momo white peach. Finished in a barrel made from Sakura (Japanese Cherry Blossom) imparting a sweet wild berry note. The resulting gin has aromas of citrus, lavender, peach, and wild cherry across the nose. The palate comes together with a blend of juniper, Mikan/Hetsuka orange and yuzu lemon, kumquat, Saigon cinnamon. he cask influence adds brioche, cherry candy and marzipan.
Okayama 12 Year Old Barely Sherry Shochu
Aged for 12 years in sherry barrels, the Okayama 12 Year Old Barely Sherry Cask Shochu has a taste of equal parts elegant and mellow. The aging process combines the best elements from sake and scotch, creating a drop excellent for both savouring and sipping. The nose has exquisite aromas of brioche, sherry, oak, and barley. Notes of summer citrus float across the palate giving way to the soft sweetness of caramel and vanilla. A long, textured, and creamy finish.
Heiwa Shuzo Furu-Tsuru-Ume Umeshu 10 Year Old
The ‘Furu-Tsuru-Ume’ is made with Nankō Ume fruit from Wakayama. The fruit is steeped in Sake for 4 months, then aged in a tank for 2 years. It is then placed in used oak barrels for further ageing of at least 8 years. This is one of the oldest wood-aged Umeshu in the market. A rich and complex example of Umeshu with a spicy oak character on the finish, this is best served slightly chilled in a wine glass to appreciate the intense and complex aromas and flavours on display here. Once opened the Heiwa 'Furu-tsuru-ume Umeshu 10YO' will last well for at least 12 - 15 weeks, ideally in a refrigerator.
Kyoya Hinata Small Batch Gin
Kyoya Hinata Small Batch Gin is distilled with generous amounts of juniper complimenting the piny flavour and provides this gin its signature warmth. Botanical extracts from hebess citrus, kumquat, yuganatsu citrus from the sunny Miyazaki prefecture have been added. A beautiful afterglow of cardamom and chamomile shine through.
Ki No Bi Kyoto Dry Gin
Ki No Bi Kyoto Dry Gin is a uniquely Japanese expression of the classic English spirit. Master Distiller Alex Davies of the Kyoto Distillery uses a spirit base distilled from rice and adds botanicals like yellow yuzu, hinoki (cypress) wood chips, bamboo, gyokuro tea, and green sanshō (Japanese peppercorn) berries that are designated into: base, citrus, tea, herbal, spice, and floral. Each botanical category is steeped into the rice spirit, which is then individually distilled before blending together. It is brought to proof using water from Fushimi, known for its purity. Ki No Bi translates to "the beauty of the seasons"
