All 9 botanicals are grown locally in Kagoshima Prefecture in South Japan on the island of Kyushu. It is aromatic, fresh and an elegant style of Gin with its unique Japanese element.Limited release.

The original gin is blended with beautiful rose water which is made with organic and local Damask rose flower, which is considered the queen of roses.

The first sake to have achieved such a degree of polishing and purity. Behind a milky soft first nose, a slightly powdered (rice powder) bouquet of flowers (peony, iris) emerges. On the palate, it strikes incredible complexity, oscillating between candy (praline, vanilla, caramel) and fresh (white flowers, crunchy pear) aromatics, its length is reminiscent of world-class wine. Dassai 23 can be appreciated for itself or as a gastronomic sake of high class that deserves dedicated pairing. Well suited for light canapés, vegetable and refreshing dishes.

We collaborate with the craftsmen and artisans of Kyoto who refine their skills in the legacy of the generations before them, working continuously in the cultural heart of Japan. Japans first dedicated gin distillery was founded with the sole intention of creating the finest gin possible: made from rice spirit and, wherever possible, using locally sourced botanicals, including yuzu, gyokuro tea and sansho pepper. Shinobu Pure Malt whiskies are crafted by master blender, Mr. Usami Ken who blends malts aged in sherry, bourbon and Hogshead casks before finishing them in Japans prized Mizunara Oak. Famous for imparting rich, honeyed flavors of apples, pears, cloves and nutmeg, Mizunara Oak has been used in Japan since the 1930s and is now sought-after by whisky makers around the world. All Shinobu whiskies are created without chill-filtration or added color to protect and enhance their deeply complex, robust flavor.Nose: Smells creamy and minty with some light peat and a touch of lemon. Mainly uses “Kishu sugi (cypress)” and Kishu Kumano hinoki(cedar)” which are famous as “Kishu wood”, and uses juniper berry as the base of the aroma of gin.
