Tamborine Mountain Distillery Moulin Rooz Absinthe
This is Australia's first premium Absinthe - Multiple distilled spirit with added Australian Botanical infusions. It presents with a mix of Aniseed and Lemon Myrtle, China Aniseed, Elderflower, Gentian, Fennel seed, Hyssop and of course the infamous Wormwood.Absinthe is traditionally drunk diluted, and there is no more lavish and beautiful way to dilute the drink than with an Absinthe fountain. Place the spoon over a filled glass of absinthe with the sugar cube on it and sit it underneath one of the taps on the fountain. Slowly drip water over the sugar until it has dissolved.

Absinthe has a history of infamy, banned across most of the world for almost 100 years, today it not only legal but one of our featured spirits. Our recipe stands the test of time as it is one of the oldest traditional French recipes of the 1850’s. Using a series of botanicals including wormwood, anise, and fennel, it produces a smooth, herbaceous flavour with a punchy finish. Enjoy the traditional way with sugar & some ice-cold water.
Hartshorn Distillery Hartshorn Gin Sheep Whey
Besides the Juniper, my aim with this Gin was to only use Tasmanian native botanicals. I discovered some very impressive native berries, leaves and seeds however they could only be wild harvested which meant I could not get enough quantity to make it practical enough for an ongoing production. I have still been able to use some Tasmanian native botanicals however I have now broadened the list to only Australian native botanicals (plus the Juniper). The use of 6 Native Australian botanicals with 3 of them never used before in any other Gin is found in this Gin.All of the botanicals are vapor infused which is a technique not used too often with Australian Gins. Vapor infusion (as opposed to steeped) will give the Gin a much more delicate and subtle bouquet. The Gin was designed to have a Beautiful smell. There will be delicate petal and citrus aromas with a hint of freshly cut hay.

South Coast Distillery Breakwater Navy Strength Gin
Breakwater is the signature gin, inspired by classic London Dry Gin and our love of the coast. Enhanced traditional bright pine and herbal notes of juniper with crisp flavours of whole grapefruit while angelica and dandelion roots impart a lingering salty savouriness. Cedar Fox Oak Gin
Cedar Fox Barrel Aged, un-filtered, Gin, Alc/Vol 45.5%, 700ml, Approximately 25 Standard Drinks. Cedar Fox's Barrel Aged gin is un-filtered and is matured in whisky barrels for a period of up to four months, imparting wood and subtle whisky notes while still maintaining upfront gin qualities. Botanicals: Juniper Berries, Coriander Seed, Meyer Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Rosemary & Lemon Verbena. Awarded highest score at Australian Distilled Spirit Awards 2018.
Four Pillars Navy Strength Gin
Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.
