It was founded in 2014 on a working sheep farm and heritage estate, 'The Grange', established in 1823, on the Macquarie Plains just outside Bathurst. Launched in March 2015, Archie Rose Distilling Co. is the first independent distillery and bar to open in the City of Sydney in over 160 years. Featuring Australian native botanicals including Lemon Myrtle, Blood Lime, River Mint and Dorrigo Pepperleaf, Archie Rose Signature Dry Gin is unique in the fact that all fourteen botanicals are individually distilled utilising one of three separate infusion points within a 300L copper pot still. While particularly labour intensive, the result is a perfectly balanced and wonderfully complex dry gin that fuses the old world with the new.

Starward Wine Cask Single Malt Whisky is uniquely Australian, crafted exclusively with local wine barrels for maturation resulting in a Whisky with balanced aromas of raisins, bananas and a touch of balsamic lead to clove, toffee and nougat. The palate is filled with red berries, hints of cinnamon and a variety of savoury and spice driven notes. A long, dry and tannic finish guides a strong linear reach through the palate, balancing a generous roundness and oiliness of the spirit.

Ink Gin is a beautifully delicate modern Australian gin. Lemon myrtle & orange citrus, soft floral & fresh pine notes are followed by a spicy pepperberry finish. Pot distilled with a blend of 12 Australian native, traditional & exotic botanicals before being infused with an exotic blue flower which imparts smoothness and all natural indigo colour. The flower is pH sensitive, mixing from indigo to blush pink with the addition of tonic, lemon or lime.
