Hobart Whisky Oatmeal Stout Single Malt Whisky (Batch 22-002)

Hobart Whisky is a family-owned distillery based in Hobart, Tasmania, established in 2014 their philosophy is entirely based around making whisky for them, that they love, and want to share. Despite being one of the first ten Tasmanian distilleries, they flew under the radar for quite a while, and in this time concentrated on making whisky. Not all expressions are the same and every bottle of every release is hand bottled and labelled in the distillery with each bottle having its own identifying bottle number. Hobart Whisky bears testimony to Tasmanian malted barley, fermented with style, gently distilled with grace, then sweetly rested in hand selected oak casks. Whiskies are matured predominantly in American oak ex-bourbon casks and each small batch holds its own distinctive characteristics and signature. This release is a barrel aged beer project from distiller and brewer, Ben and Trevor. Starting with an Oatmeal stout that was brewed onsite and barrel aged in ex-bourbon cask for 3 months. Carefully selected ex-bourbon mature single malt whisky was vatted before finishing in the freshly decanted stout cask. Initially planned for release in August, the stout was served at the 2022 Tasmanian Whisky Week boilermaker event at the Gold Bar. However the release was delayed with distiller Ben deciding to re-cask it into another fresh stout cask. The result is an undeniably stout cask influenced whisky that is rich and bold with notes of roasted hazelnuts, rich caramel, and subtle tobacco. Fruit and nut chocolate, banana bread, chocolate coated liquorice, a long finish with gentle ginger and rye spice sweetness lingering.

Sullivans Cove Old & Rare French Oak Single 18 Year Old Single Malt Whisky (TD0020)

Product Information: As one of the oldest Australian single malt whiskies ever released, this bottling is a true piece of whisky history and has incredible texture, complexity and length of palate. Batch TD0020 was filled in February 2005 and matured until April 2023, totalling 18 years and 2 months of aging. This single cask, a 200-litre American oak barrel, was seasoned by an older batch of Sullivans Cove single malt. Second-fill casks like this one allow for extended maturation without overwhelming the whisky with excessive oak influence or pre-fill. The resulting whisky achieves a perfect balance: retaining its signature spirit character while integrating a gentle oak influence. This balance allows the fruity esters from their copper Alembic still, named 'Myrtle', to prominently feature in the flavour profile. As single cask bottlings, this is one of only 178 bottles. Every tiny batch is different, expressing the unique characteristics of each barrel. Each bottle comes in a unique, hand made, solid oak presentation box, and includes a letter of authenticity signed by their Distillery Manager. TD0020 captivates with its intricate depth and velvety texture. A shining example of meticulous aging, showcasing remarkable complexity without overwhelming the palate. Sweet, savoury, perfectly balanced and elegantly restrained, TD0020 invites you to sit with and embrace this incredibly warming whisky. Maker: In 1994, on remote island at the far end of the world, a distillery was brought to life from humble beginnings. Away from the whisky establishment, Sullivans Cove were free to explore and perfect their process. Informed by the past and inspired by possible. Bringing a distinctly Tasmanian twist to a whisky craft, shaped by centuries of practice. 20 years later, their commitment to carefully crafting exceptional whisky, inspired by nature and patiently aged, was rewarded when Sullivans Cove was named the World’s Best Whisky. Overnight the secret was out. Special things were quietly happening on this small 'Apple Isle', and whisky lovers globally were intrigued. In a world of instant gratification and impatient consumption, Sullivans Cove offer an alternative. Genuinely rare whisky which can’t be rushed and which can never be replicated. Philosophy: Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good water and good grain is the foundation of all high-end whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (lovingly called Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Nose - Caramelised Orange, Apricot Roll-ups, Almond Butter Enticing aromas of caramelised orange, apricot roll-ups and sweet almond butter greet the senses. A touch of pleasant warmth emerges with subtle notes of orange blossom and hints of soy candles. The classic Sullivans Cove spirit notes emerge with warm tropical fruits and whispers of waxy peach. Palate - Pecan, Biscotti, Bergamot The texture is luxurious, with sweet pops of fondant icing and apricots. Marzipan dances on the palate, followed by the nutty richness of Brazil nut and pecan. Subtle nuances of biscotti dipped in milky tea emerge, with hints of linseed oil adding complexity. A touch of rose water adds further complexity to the narrative. Finish - Pastry Puffs, Hot Chocolate, Toasted Apricots The robust finish culminates as the delicate sweetness of pastry puffs and dried cacao intertwine with the comforting warmth of hot chocolate and toasted apricots. There is a wonderful creamy texture here that lingers on the palate - a pure delight. Nose - Dates, Cacao Nibs, Orange Peel Vibrant and with aromatic oak presenting as antique furniture, incense, and Autumn leaves. As it opens in the glass, the spirit and ex-Tawny pre-fill come forward through the oak with a beautifully integrated array of fruity and briny notes: bonito flakes, blackberry syrup, orange pulp and more berries. Dates, cacao nibs, candied orange peel and fresh orange provide depth and carry a smooth transition to the palate. Palate - Peaches in Syrup, Vanilla, Bran Cereal Palate Very quickly characterised by a wave of tight tannin; Tawny and oak-forward for just a moment, and then an explosive, bright and juicy fruit profile presents peaches in syrup, orange cordial and raspberry jam. A divine vanilla syrup note mingles with a savoury base element (bran cereal, and bonito flakes again), as clove and aniseed point back to the spirit character. Rose, sticky date pudding and fruit mince pies linger on the back palate. Finish - Mandarin, Musk, Nutmeg A beautifully long and layered finish presents mandarin, musk and nutmeg. Red dates and Madeira come next - incredibly rich and earthy, classic Tawny influence - and lots of liquorice mingles with notes of raisins and orange cake. Vanilla musk echoes throughout. Hobart Whisky Tasmanian Botrytis Finish Single Malt Whisky (Batch 23-001)

This whisky has undergone a unique maturation process that has resulted in an unparalleled flavour profile. Initial maturation for three years in American oak ex-bourbon cask, imparting a rich foundation of sweetness and character. Next, it spent two and a half years in a Tasmanian Botrytis cask, infusing it with intriguing floral notes and the delicate essence of Riesling tropical fruit. To enhance complexity, depth and assist with structure and balance, it was then transferred back to an American oak ex-bourbon cask for an additional six months, allowing the flavours to harmonise and reach their full potential. On the nose, you'll be greeted by an enticing blend of floral aromas, reminiscent of a fragrant garden, intertwined with the allure of Riesling. Further complemented by treacle, succulent strawberries, nougat, tobacco, and a hint of zesty lemon meringue. As you savour each sip, you'll discover a well-balanced combination of vanilla, a touch of light earthiness, and the lusciousness of sweet, candied red fruits. The palate comes alive with a vibrant freshness, offering the tantalising experience of lemon sherbet, mandarin salted caramel, rye spice, and an intriguing interplay between sweetness and savoury notes. A journey from green mango to dried grape, with a touch of seaweed, light smoke, and a gentle funk that adds to the whisky's character. A finish that is both exhilarating and indulgent. The light pepper spice expands on the palate, gradually revealing a thick and sumptuous fruit mince pie sensation. The experience concludes with lingering hints of molasses, dark chocolate, marmalade, caramello, and a subtle dusting of icing sugar.

The Bitter Truth Pimento Dram Liqueur

English explorers coined the term allspice because the berry seemed to embody the flavors of cinnamon, nutmeg and clove all at once. On the Caribbean island of Jamaica, this distinctive aromatic liqueur has been produced for generations by macerating allspice in the finest Jamaican rum.
