Impression Bay Distillery is located on the beautiful Tasman Peninsula, Tasmania. Our First Impression Gin is made in the London Dry style and incorporates not only traditional botanicals including juniper, cardamom, coriander, cassia bark and lemon myrtle but also our three, fresh, locally grown aromatic botanicals, Mountain Pepper berry, Saltbush and Kunzea. These botanicals are vapour infused in the last stages of distillation in our German still, preserving their subtle aromas and flavours. First Impression Gin is smooth, well balanced and unlike some other gins, crafted to be enjoyed neat or on the rocks. 42%ABV.

First ever vodka in the world to be peat smoked. Using Tasmanian Peat from the North West Coast of Tasmania which has almost identical climate and weather conditions to that of Scotlands west coast. Tasmanian style Pommeau! Charles Oates is making a beautiful Pommeau considered a Mistelle. An aperitif inspired of the traditional Pommeau de Normandie. Delicious marriage between Apple brandy and freshly pressed tannin-rich apple juice, Pommeau combines intensity of flavour, sweetness and gentleness. Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.

Kreglinger Vintage Brut is made by the pretigious sparkling producers from Piper's Brook. The bottle age adds an extra dimension of complexity and finesse.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.
