Tasmanian style Pommeau! Charles Oates is making a beautiful Pommeau considered a Mistelle. An aperitif inspired of the traditional Pommeau de Normandie. Delicious marriage between Apple brandy and freshly pressed tannin-rich apple juice, Pommeau combines intensity of flavour, sweetness and gentleness. Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.

Manly Spirits Marine Botanical Vodka is distilled like a Gin, without the use of any Juniper. This has resulted in an incredibly smooth Vodka that is absolutely reflective of the ocean and Australian beach culture. With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

Kreglinger Vintage Brut is made by the pretigious sparkling producers from Piper's Brook. The bottle age adds an extra dimension of complexity and finesse.

Dalrymple Vineyards was established in 1987. Situated in the heart of the Pipers River region of north-eastern Tasmania, almost equidistant from Launceston, Scottsdale and George Town. Dalrymples own vines are planted on sloping hills that overlook Bass Strait, and they also have access to vineyards in other parts of the State. This Single Site Pinot Noir comes from the Coal River Valley, just outside Hobart.

Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.
