Botanicals are steeped for 24 to 48 hours then additional Juniper and Liquorice Root are vapour infused in the neck of our copper pot still to give a traditional Juniper flavour at the front of the palate through to a sweet liquorice finish. This gin is triple distilled giving the spirit an ultra-smooth flavour despite the higher than normal ABV. Nose: Immediate sweet floral notes of juniper, liquorice and spice. Palate: From a bright and sweet juniper opening, the flavours build across the palate to include perfumed floral notes, bright citrus and a crescendo culminating in a big, warm and comforting glow of star anise and liquorice root. Finish: A round smooth mouthfeel from this oily spirit gives way to a fine clean finish of liquorice and spice.

Tasmanian style Pommeau! Charles Oates is making a beautiful Pommeau considered a Mistelle. An aperitif inspired of the traditional Pommeau de Normandie. Delicious marriage between Apple brandy and freshly pressed tannin-rich apple juice, Pommeau combines intensity of flavour, sweetness and gentleness. Pommeau is produced by blending an 18th month old Apple Brandy and apple must.In the Huon Valley, Charles Oates is using a proper Charentais alembic still, the design used in Normandy (France) to produce Calvados Pays d'Auge. The Charentais alembic still was designed in the early 16th century in the Cognac region of France where it is still used for fine Cognac production. They produce an aged apple brandy from their still, in the same style as Calvados. They also produce a lighter apple spirit, Charles Oates Apple Blanco, a delicately flavoured spirit.

Kreglinger Vintage Brut is made by the pretigious sparkling producers from Piper's Brook. The bottle age adds an extra dimension of complexity and finesse.

Locally sourced, Hippocampus vodka is distilled in Western Australia. The vodka is twice distilled and not filtered, which lends a smooth richness and subtle flavour. Its full body and depth mean it lends itself well as a cocktail base.

In the glass: Fine straw yellow with a very slow release fine bead. On the nose: Nectarine and peach over hazelnut with leesy richness. On the palate: Intense and elegant with white peach and white strawberry umami plus fine elements of flint, struck match and velvety roundness under a bright, racy frame of acidity. With a gentle piney juniper and dry coriander seed base lifted up by fresh Australian mangos, raspberries, and white grapefruit juice to create a lively character. Highlighted by the delicate floral flavours of red rose petals and lavender, and warmed by cassia bark. Australian native botanicals of strawberry gum, lilli pilli and river-mint give a gentle, sweet, berry like element and deliciously refreshing. Superb in a G&T, terrific in fruity cocktails and easy to drink with soda water.

House of Arras sounds French and it would be easy to mistake this Brut Elite for a NV Champagne. Arras winemaker Ed Carr has spent the last 15 years on a quest to produce a world class sparkling. With this wine, we considered it mission accomplished! Vanilla, nougat and exotic spices on the nose, followed by a palate bursting with lychee, truffle and cinnamon flavours, this is a complex, elegant wine. Australian sparkling has come a long way in the past decade, but this is a wine that really excites us.
