Capricorn Spiced is a finely crafted, small batch distillation of Central Queensland molasses. We've left to age in European and American Oak barrels it matures quickly in the tropical heat to produce a dark and hearty spirit. Mixed with a traditional bill of spices that has an Australian twist to it, it drinks superbly straight up, with Ginger Beer and Lime, or in a cocktail. Capricorn Spiced has no added chemicals and is made from all natural ingredients.

Beautifully aromatic and smooth the Elegant Dry Gin is our classic shout out to the London Dry Gin style. Made on the farm in the Macedon Ranges 16,833km away from London. Full of flavour with floral notes, well-rounded and balanced that is just lovely in a G&T.Made with fresh rain water collected off the farm, juniper, orange peel, cardamom, orris root, cassia bark, coriander, star anise and angelica.Serve as a G&T using a good quality tonic with either a slice of dehydrated blood orange or a twill of fresh orange peel and ice.

With winter rains, healthy and wholesome grapevines protruded out of the soil at the Jansz vineyard. Grapes were picked from a single block in the vineyard, the whole bunch pressed, and fermented and aged in French oak barriques with more than five years on lees. This extensive winemaking procedure resulted in the creation of an elegant Chardonnay wine displaying pale gold colours with an exceptional bead. The lifted bouquet gives out scents of truffles, oyster shells and preserved lemons coupled with underlying nuances of honey nougat and Amaretti biscuits. The complex and intense palate is an amalgam of brioche, roast almond nougat and crystallised lemon nuances that balance the chalky minerality and creamy texture of the wine to provide a refreshing and lengthy climax. The wine possesses an alcohol content of 12% and is a great pairing with whole baked snapper with ginger and citrus.

A spice driven gin, with a pungent juniper base. Flavoured by four different peppers, as well as cardamom, clove and cumin. Fresh citrus notes added from lemon and lime, with a crisp finish from the added cucumber. A bold gin, which makes a great "Red Snapper", or a "Dirty Martini". Serve with any of Lemon, Lime, Cucumber, Capsicum, Fresh Ginger, Orange, Mandarin in a Gin and Tonic

A herbaceous gin, with strong notes from fresh Basil, Vietnamese mint, Sage and Dill. Floral notes from Hibiscus, with woody sweet after tones from cinnamon. A subtle juniper sweetness blends it all together. Best served with a sweet garnish like apple, to bring out the floral notes in a Gin and Tonic.

A bold driven Navy, with a powerful punch of Juniper, tart notes from full fresh oranges and spice from cardamom and clove. Best served as a slow sipper with a slice of orange and a clove. Is great in cocktails due to it powerful flavour profile.
