High up in the Adelaide Hills, Paracombe is owned and operated by the Drogemuller family, which it has passionately done since 1983. Occupying some of the more elevated land in the Canberra District, Quarry Hill produces a Shiraz with ripe flavours and excellent natural acids; the hallmarks of great cool-climate Shiraz. Aged in a mix of new and older French oak, the wine is bright purple in the glass, follwed by aromas of raspberry, plum, spice and a little pepper. Through the palate, there are flavours of mulberry and plum, fine tannins and a crisp, dry finish.

Deep golden colour and a dense foam. Full nose of pine, apricot, citrus, grapefruit and light plum with a slight dank hop grassiness. Light malty in flavour. Strong hop flavours of pine, citrus, apricot and stone fruit. Strong but very smooth bitterness from front to end. Medium-light body with a dry smooth yet bitter finish, leaving you wanting for more. The hop cones were lured by the tunes of the Piper to give this IPA extra flavours.

Vinification is simple and centred around preserving the delicacy, freshness and vitality found in early picked old vine fruit. This Spinifex Rose consists of Grenache (52%), Cinsault (30 %), Mataro (14%) and Ugni blanc (4%). Bunches from mature (averaging 65 years of age) dry drown vineyards are hand harvested and the crushed and left to macerate for between 4 and 48 hrs prior to pressing.

Red wine artisan, Marco Cirillo, has produced a single vineyard Shiraz with as minimal intervention as possible. Using 90% whole berry and 10% whole bunch as well as natural yeast fermentation without fining or filtering, this Shiraz screams of its terroir. Expressive fruit up front of plums and red berries with small waft of leafy characters. The palate dances across the tongue without hindrance from over use of oak and is a supreme wine for the price.
