Despite its long ageing, this minimum 30-month blend is not overtly sweet or oaky; it has a drier style, which is full of spice and character from its highland terroir. Cooked agave is present with a fine mixture of dried fruits, almonds and roasted coffee. There is a subtle and masked fudginess reminiscent of dark cocoa that emerges from the depth in its long and slightly dry finish.

Hussong’s Silver Tequila is made from 100% blue weber agave, harvested at a minimum age of 5 years, from both the lowlands and highlands of Jalisco, Mexico. A unique cooking method combining the old traditional way of cooking agaves in brick ovens and stainless steel autoclaves for 32-36 hours. The silver or blanco is tequila in its purest form. Unaged and crystal clear, this tequila is crisp, smooth and full of 100% Agave flavour. The aromas are bright, fresh cut grass, citrus and vanilla with similar flavours coming through on the palate along with some butterscotch and pineapple.

Calle 23 is a highland tequila from Jalisco. Its creator, French-born biochemist Sophie Decobecq, distils each expression separately (Blanco, Reposado, Aejo) to its own special recipe. Her tequilas are double-distilled and she uses Bourbon casks from Kentucky. This anejo tequila is aged 16 months. In 1999, Guillermo Erickson Sauza decided to bring back the old Sauza family distillery to life. Today he produces Tequila Fortaleza there using 100% stone-milled agave, entirely produced on the estate which lies right in the middle of the town of Tequila. Fortaleza Reposado Tequila is rested for 8 months. It has an amazingly soft texture with a vegetal sweetness balanced against soft and sweet vanilla notes from the ex-bourbon barrels in which it is rested.
