Michters is Americas first distilling company, dating back to 1753 when they started out making rye whiskey. They take a 'Cost Be Damned' approach to the production of every barrel, using various methods including air drying for 36 months, toasting the barrels before charring them, using a low barrel-entry strength, heat cycling to encourage ageing during the frigid winters and using specific filtration types for each whiskey they make. The Sour Mash is their original recipe whiskey.

Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then finished in casks that previously held Caribbean rum. To create the ideal finish Malt Master David Stewart, filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit,with a warm, lingering finish. The Bladnoch Bicentennial Release has been matured for 29 years in Oloroso Sherry casks and finished in Moscatel casks for a final 18 months. Only 200 bottles were made to celebrate 200 years, making this an extremely rare release. Colour: Chestnut gold. Nose: Lovely rich old Sherry aromas, acacia, honey, beeswax, orange, fruitcake, a whiff of coffee and a hint of chocolate. Palate: Soft and silky Sherry flavours. Dark chocolate, ginger, spicy citrus notes, balanced oak and a hint of ground black pepper. Finish: Warming with a hint of honeyed spiciness. Satisfying and long.

KOVAL Distillerys organic, single barrel bourbon has the requisite mash bill of at least 51% corn, but instead of the usual rye or wheat supplement, they have included millet. Tucked away in a charred new American oak barrel to age, millet and corn learn to complement each other, neither taking the lead.

The KOVAL Millet is aged in new American oak barrels from Minnesota. Millet is a prized grain in Asia and Africa and popular base for spirits in Nepal, though this is the first whiskey to be made from Millet. Only the heart cut of the distillate is used, no heads or tails.
