Sam Trimboli LOVES Durif. He calls it a “stunning little powerhouse grape that develops astounding complexity”. The numberplate on his car even sports the word ‘Durif’, that’s how highly he rates it. The grapes for this wine come from a small vineyard that Sam helped establish in the 1980s and is now at peak maturity.

The nose leads with freshly picked strawberriesand cream, and pink grapefruit. The palate shows restraint with delicate strawberry fruit, bright and elegant minerality, grapefruit pith, and a soft supple lingering finish.

Being a cool climate Riesling, the ripening of grapes occurs later which develops complexity. Whole bunch picked and gently pressed, then barrel fermented with 25% new oak for 11 months. Grapes grown in the Canberra District with its cool climate ripen slowly, allowing more intense flavours to develop. This wine has a bright golden straw colour and aromas of stone fruit and gentle oak, ripe melon and grapefruit characters with a well-balanced, long lingering finish.

Made using the Petillant Naturel method aka Pet Nat, this wine is a rock star in and out of the bottle. Made from a blend of the energetic chardonnay from the famous Saltwater River vineyard and pinot noir rose. It sees a small amount of new oak for added texture. This is some seriously good pet nat, living up to Tasmania's reputation as the home of Australian fizz.

Col Fondo Prosecco undergoes secondary fermentation in bottle and isnt disgorged. The flavoursome leesy sediment dances on the bottom, hence col fondo, literally meaning from the bottom. This is how Italian prosecco used to be crafted before industrialisation turned it into mostly cheap fizz made in stainless steel tanks. This is complex, refreshing, lightly fizzy with plenty of acidity keeping it alive and kicking.
