With careful cellaring, this Jacob's Creek Classic Cabernet Sauvignon has developed into a beautifully balanced and elegant red. The vibrant crimson and purple hues have mellowed slightly, while the aromas of blackcurrant and cedar spice have deepened, now joined by subtle earthy and tobacco notes. On the palate, the dark berry and cherry flavours are smoother and more integrated, with the once-tight tannins now rounded and refined. The finish remains long and satisfying. For this wine, they blended Barossa Cabernet with Shiraz and a dash of Malbec to create a wine with layers of texture and flavour. By drawing fruit from a number of Barossa sub-regionseach with their own unique terroirthe Mentor captures the immense regional definition of a great Barossa red. Having worked closely with the growers over the years, they share Peter's belief in growing wine, not just grapes, and work with the winemaking team to keep yields low and produce a complex wine, with rich and firm dark fruit flavour.

Sorby Adams Neptune Rings is a premium red wine range of signature Barossa grape varieties sourced from the region's finest soils. This collection honors our ancestor, John Couch Adams, who, along with fellow mathematicians, proved the existence of the planet Neptune in the 1840s. His name is immortalized in one of Neptune's five rings. Galle is another ring of Neptune and is our signature Barossa Cabernet Sauvignon wine. This wine showcases a dark, brick-red color with a magenta hue and features complex aromas of cherry and plum. On the palate, rich black cherry and plum flavours come alive, accompanied by hints of licorice and mint, all with impressive length and finesse. It has been matured in French oak hogsheads (30% new) for 24 months, using air-dried wood from Francois Frere and Taransaud Coopers. The grapes are sourced from Angaston in the Eden Valley and Ebenezer in the Barossa Valley. It is enjoyable now and has the potential to age beautifully until 2038. This wine is sealed with QORK.
