The goal from the outset for Italicus was to create a spirit that had exceptional provenance. All the ingredients are 100% Italian, taking the best examples from different regions: Bergamot from Calabria; Cedro from Sicilia; Roman Camomile from Tuscany; Lavender, Gentian, Yellow Roses and Melissa Balm from Piemonte. Our neutral grain spirits are also Italian. Even our cap and bottle are made in Italy. And we do not add any refined sugar or syrup, instead we naturally sweeten our liqueur with a natural brown sugar (cane sugar) in order to respect the Rosolio production process as it was back in the 15th Century. The tequila base is more salient in the mouth, with a creamed-up texture that’s akin to coffee flavoured milk with a splash of tequila and dark chocolate for good measure. Naked Maraschino is an intense cherry liqueur that fuses traditional Italian Maraschino flavours with a smattering of Australian desert peaches. This luxurious liqueur is the result of over two years of experiments and trials. Many cherries were harmed in the process and White Possum make no apologies for their actions. Their final recipe goes something like this. First, they crush a ridiculous number of sour cherries into a paste, then slowly ferment the mixture over many weeks to extract those deep funky cherry flavours. This 'cherry wine' is then distilled in a pot still where we remove the sharp 'heads' and the lousy 'tails' of the distillate. From there, they let it rest and age in a small vat until the flavour mellows a little. Then they add a rich infusion of quandongs, a semi-sweet indigenous ‘peach’ that contributes a distinctly fruity aroma, and a couple of other herbs and roots before letting all the flavours rest further and marry together in harmony. Contains no artificial colours, flavours nor preservatives. All of White Possum's liqueurs, including Naked Maraschino, are bottled in recycled glass spirit bottles where possible. These bottles, harvested from a network of bars, are given a rough massage to strip the labels off, then a hardcore rinse, sanitisation and a polish before being revived with a new liqueur filled life.

The white 2020 La Pell Blanco Parcela el Vinyet is crafted from a 1.41-hectare vineyard planted in 1889, featuring a unique field blend of over ten grape varieties, including Trobat Blanc, Hebén, Sumoll Blanc, Macabeu, Xarel.lo, and more. The grapes, harvested at three different ripeness stages, were destemmed, barely crushed, and fermented with skins in clay tinajas for four months, undergoing malolactic fermentation. The wine matured in a tinaja, a 500-liter acacia barrel, and glass demijohns, some developing a flor yeast layer. The result is a delicate, floral, and distinctly Mediterranean wine with notes of underbrush and fennel. It offers moderate ripeness and alcohol, showcasing complexity, elegance, and freshness with very tasty flavors and an almost salty finish.
