After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Traditionally favoured by Indigenous societies for their medicinal benefits and protein content, native Green Ants are a unique bush tucker hand harvested in the Northern Territory by the Motlop family of the Larrakia people. The Green Ants display vibrant coriander and kaffir lime leaf flavours, with a citrus and lime burst on the palate further enhanced by Finger Lime. Native Juniper (Boobialla) is evident in the floral, perfumed aromatics, while spicy notes of Pepper Berry balance the citrus flavours. Strawberry Gum, Lemon Myrtle and Anise Myrtle provide green, leafy herbaceous characters which replicate traditional English Juniper resin characters.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Our handpicked sloe berries were foraged across Tasmania in late summer and left to rest in our heavenly gin before being bottled for you to enjoy.

Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.
