Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.
