Six Dogs Blue derives its name from the Blue Pea flower (Clitoria Ternatea), an antioxidant and aphrodisiac in traditional medicine. As chance would have it, ‘Blue’ is also the name of the smallest dog in our pack of six. The infusion of Blue Pea gives the Gin its striking blue colour. The alchemy of this unusual botanical is further revealed when the Gin is mixed with a good tonic, changing the colour to light pink. Six Dogs Blue is the most royal of Gins. A party Gin. A touch of magic. A classic dry Gin with experiences of freshly cut lucerne over hand-picked and morning-harvested Rose Pelargonium. Crafted using the finest English wheat, seven times distilled and blended with Harrogate spring water from the world-famous Harrogate aquifer. Ink Dry Gin was created in the Northern Rivers of NSW after a global voyage of botanical discovery. This natural floral infusion of butterfly pea flower petals gives Ink Dry Gin a remarkable and lustrous inky blue hue. Visually beautiful with changes of colour from deep blue to blush pink when mixed with tonic water or a splash of lemon juice. Distilled with a blend of traditional and exotic ingredients, the flavour of juniper , native lemon myrtle, Tasmanian pepper berries and sweet orange make for a aromatic and full flavoured experience.

Awarded Ireland's best gin, Dingle Original Gin contains botanicals from a pristine Kerry landscape, including rowan berry, fuschia, bog myrtle, hawthorn and heather. Macerated for 24hrs, the spirit is distilled in a hand beaten copper still with resulting vapors passing through a flavour basket. The distillate is then cut with pure water drawn from a well 240ft below the distillery. Each bottle is hand filled and numbered by batch. Best served over ice with tonic and a wedge of fresh orange.

Our small batch philosophy entails handpicking and sourcing the finest botanicals, we draw our own fresh water, distil on our small copper still and individually bottle, wax and label each Shortcross bottle.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon.
