Introducing Cedar Fox Distilling Co, a newcomer to the Australian independent spirits space with the release of its gin. A savoury dry gin with peppery fragrant earthy aromas, it incorporates urban botanicals such as Juniper Berries, Coriander Seed, Lemon Peel, Lebanese Cucumber, Sichuan Peppercorn, Lemon Verbena and Rosemary. The result is a simple yet expressive character.

Gin Mare is a premium Mediterranean Gin from Spain. The uniqueness of Gin Mare lays on its Mediterranean ingredients, being the only Gin using Arbequina Olives, Rosemary, Thyme and Basil as its main botanicals. The result is a delicate Gin with a savoury twist. Gin Mare is exceptionally versatile, it makes a great G&T, garnished with a rosemary sprig, as well as being the perfect base for many classic Gin cocktails.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.

Three generations of the Drouin family have produced quality Calvados in the Pays d'Auge region, seeking to express the full complexity of the thirty apple varieties in their orchards. Guillaume Drouin has created this hand-crafted Gin using the art of blending developed for classic spirits.

Pot still is an equipment used to distill spirits. It is a slower process and had to be done in batches in a single distillery. Green Spot is an Irish whiskey that mixed pot still whiskeys aged between 7 and 10 years, in order to find the perfect balance on the smell and taste. It opens up with notes of orchard fruits, sweet spices and toasty oak. Full body and a lasting pleasant finish with flavours of warm spices and barley.

Nouaison: the name means setting and is the beautiful metamorphosis stage from aromatic flower to luscious berry. Complex, intense and spicy, GVine Nouaison is for gin connoisseurs. Six Dogs Blue derives its name from the Blue Pea flower (Clitoria Ternatea), an antioxidant and aphrodisiac in traditional medicine. As chance would have it, ‘Blue’ is also the name of the smallest dog in our pack of six. The infusion of Blue Pea gives the Gin its striking blue colour.
