This modern Australian Dry gin has a delicate citrus sharpness which it obtains from desert lime, it has spicy base notes from pepperberry and a unique peachy sweetness from the infused quandong. Harvested locally by hand in order to preserve their true essence, these botanicals capture unique characteristics and delicate flavours to ensure outstanding quality for you, the gin connoisseur. Our handpicked sloe berries were foraged across Tasmania in late summer and left to rest in our heavenly gin before being bottled for you to enjoy.

After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Gold Medal Winner in the San Francisco 2020 International World Spirits Competition.

Writers Tears Pot Still Irish Whiskey delivers a wonderful combination of soft bourbon notes with an undercurrent of light malt with crisp, mouth watering bursts of honey and spice. This is a throwback to the last century in Ireland where spiced Pure Pot Still Whiskey was married with floral single malt.

Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Six Dogs Blue derives its name from the Blue Pea flower (Clitoria Ternatea), an antioxidant and aphrodisiac in traditional medicine. As chance would have it, ‘Blue’ is also the name of the smallest dog in our pack of six. The infusion of Blue Pea gives the Gin its striking blue colour. The alchemy of this unusual botanical is further revealed when the Gin is mixed with a good tonic, changing the colour to light pink. Six Dogs Blue is the most royal of Gins. A party Gin. A touch of magic. A classic dry Gin with experiences of freshly cut lucerne over hand-picked and morning-harvested Rose Pelargonium. The gentle pink colour of the spirit is achieved by maceration of hibiscus flowers post-distillation. Hibiscus is a symbol of the Okinawa Islands blooming all year round.
