This modern Australian Dry gin has a delicate citrus sharpness which it obtains from desert lime, it has spicy base notes from pepperberry and a unique peachy sweetness from the infused quandong. Our barrel aged Gin is a small batch handcrafted Gin. It is made using a selection of old and new world botanicals. The Gin is then left in French and American Oak ex Barossa Valley Shiraz barrels, giving a smooth caramel richness to balance the citrus and juniper with a warm, woody finish.

Gin is created using limonene, one of the main compounds found in cannabis plants. The limonene adds an ultra-rich profile to the spirit, mingling alongside notes of juniper, mandarin and lime, and finishing with soft spice. Limonene is also found in citrus peel and is said to have anti-inflammatory properties which can be used to relieve stress and naturally decrease anxiety and depression.

Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence. In looking to create a gin with enough presence to shine in strong cocktails, the more delicate, floral botanicals have been left out. So it's adios strawberry gum leaf, granny smith apples, lemon myrtle and dried chamomile, and hello loads of juniper and the earthy depth of liquorice root.

Our Navy Gin is bold yet balanced, full flavoured and complex Gin based on similar botanicals as our Dry Gin with a few little tweaks. This fuller flavour Gin will bring to life any cocktail with its Navy Strength complexity, but can be enjoyed simply over ice as a sipping Gin.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Ireland's most awarded Gin, Shortcross is a classical style with a unique twist; best described as floral meadows, wild berries and grassy notes. Our small batch philosophy entails handpicking and sourcing the finest botanicals, we draw our own fresh water, distil on our small copper still and individually bottle, wax and label each Shortcross bottle.
