Geometric is an unapologetically a bold juniper and coriander gin. Along with subtle Cape Malay style cinnamon, cardamom and clove lined with the earthy indigenous buchu and Cape snowbush.Botanicals are bound together with Cape brandy, a masterfully textured spirit which gives this gin its uniquely rich and round profile. Prominent juniper and earth notes followed by subtly spiced citrus. Juniper, Cape snowbush and clove interlace around the soft-edged texture of the spirit. After visiting Cobram Estate during olive harvest we realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and we did a year of trials before finalising the recipe for this gin. The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. We have used olive leaf and oil from Picual, Hojiblanca and Coratina varieties. This gin is savoury, textual and bright. Perfect for any Martini - Gibson, dirty or dry with a twist. For a longer drink, try it in a Spanish-inspired gintonic, with rosemary and lemon. Poor Toms Fool's Cut at 52% is for audacious gin drinkers looking for a spirit with strong Juniper presence.
