A gin that is ever changing and makes an exciting addition to any gin collection. The seasons are ever changing it could be Rhubarb, Cherry, Sloe Berry or Elder-flower. Depending on the season and the fresh produce we can grow on the farm or source locally. For our first seasonal release we have discovered Cumquats are magnificent in gin so we have infused them in our GiN with a limited number of bottles produced each time.

Created using our base spirit which is grown, harvested & distilled at our East Coast Distillery, located in the pristine Island state of Tasmania, this artisan style Hopped Gin is a combination of the 9 botanicals which include locally sourced Tasmanian pepperberries, lemon myrtle, and the renowned Tasmanian hop. We pass alcohol vapour through a mixture of juniper and hop, creating a perfect fusion of flavours. Our classic Small Batch flavour with a delicate but rich hoppy nose and a long smooth finish.

Embezzler Gin is designed to be a well-balanced gin that incorporates a strong juniper character. Blended with citrus, florals, spices, sweetness and ending with a traditional London dry finish that lasts just long enough before you are wanting to take another sip. Named after William Henry Ellis, a convicted embezzler and founder of Dysart House Embezzler Gin can be drunk straight, on ice, with tonic or OKD's personal suggestion chilled with a slice of lime. Either way the Embezzler should stand out in your glass.

Unique to Old Kempton Distillery Lavender Malt contains a blend of three pure ingredients Tasmanian mountain water, Tasmanian lavender and malted barley. This secret recipe is combined through our copper stills in the heart of Tasmania to create a delicious liqueur with hints of honey, spice and, of course, lavender. Aqua Vitae Modern Gin is as natural as it can get, and brings a flavour like no other.Translated from old Latin, aqua vitae means water of life, a term used for distilled spirits that originated in the Middle Ages. Reinvigorating the name called for reinvigorating the spirit.With a focus on local Tasmanian and Australian ingredients, some of which we harvest ourselves, Aqua Vitae challenges the heavy gins that dominate the Australian market, providing a modern, clean spirit that teases the palate with fresh, fruity, and floral notes. The imperial mandarin, eucalyptus, and lemon myrtle notes pair well with a light tonic and a slice of fresh peach or mandarin.

Our signature gin is craftfully made using 16 different ingredients which combined in our secret balance of flavours produces a delightfully tasting botanical gin. The Botanicals used include; Juniper, Coriander Seeds, Star Anise, Almonds, Cloves, Cardamom, Dill Tips, Ginger, Grains of Paradise, Black Pepper, Orris Root, Cinnamon, Angelica Root, Fresh Lime, Fresh Lemon and Fresh Orange.

Our Navy Gin is bold yet balanced, full flavoured and complex Gin based on similar botanicals as our Dry Gin with a few little tweaks. This fuller flavour Gin will bring to life any cocktail with its Navy Strength complexity, but can be enjoyed simply over ice as a sipping Gin.

The wild bush lemons on Lord Howe Island descend from the fruits of the early settlers. They were planted to help sustain them during the long periods between passing ships. They have a unique enveloping aroma, but beware the thorns! In the days of ships and flying boats, a tradition on Lord Howe Island was to throw flower leis into the water from departing launch boats.
