Wine by Farr G.C Chardonnay, Geelong The GC Chardonnay is named for Gary Charles Farr who began gold mining in Bannockburn in the 1970s. a complete Chardonnay. The fruit is hand-picked then pressed whole-bunch. The resulting juice and solids are chilled prior to being put on 35% new French oak. Over the following two months, natural fermentation will occur with a little less stirring to promotes the malolactic fermentation. After racking, fining and a little filtering, the wine is bottled nearly a year later. Those at the Farr winery call it a complete Chardonnay.

Vanya Cullen continues to amaze the world with her brilliantly flavoursome and elegant Cabernet named after Di Cullen, a true pioneer. Yarra Yering, well known for their pristine and elegant red wines, also make one of the Yarra Valley's premier Chardonnays. Made solely from the original 1969 plantings, the Yarra Yering Chardonnay is fermented traditionally in open top fermenters and crafted to age in bottle for extended periods. The wine goes through 100% malolactic fermentation which adds complexity and roundness without foregoing natural acidity and structure. Aged in 40% new French oak, this classic white wine combines intense opulence with finesse & textural flintiness.

As Australian Chardonnay continues its re-emergence, Vasse Felix Heytesbury is firmly leading the charge with its complex, modern style that has seen the winemaking team take home a cabinet full of trophies and gold medals in recent years. 100% wild yeast fermented and matured in French oak for only nine months, there is a power and persistence that is unmistakable. A flavour cavalcade of matchstick, citrus, white peach and grapefruit alongside a subtle toasty, nutty aspect from the sublime oak regime. One of the rare Penfolds wines that is 100% single-regional, the Reserve Bin Chardonnay is sourced from super premium sites in the Adelaide Hills resulting in a fresh, mineral style that lies at the forefront of the modern Chardonnay style. A wine that will always be linked with 'White Grange', Penfolds Yattarna, it shows a palate of Granny Smith apples and lemon curd with a pure chalky texture.

Houghton Gladstones Cabernet Sauvignon is a wonderful example of well established wineries in the Western Australian wine scene with access to some amazing vineyards sites within the Margaret River. On show here are marvelous aromas and flavours of bay leaf, black tea and some spicy mocha notes. Excitingly dense on palate with harmonious oak balance and impressive acidity. A brilliant wine.

Hunting Hill is situated on the hillside just opposite the winery and produces beautifully floral and perfumed Chardonnay with a distinctly liner and long palate.
