Brocard wines represent the higher end of expression at each quality level. The Chablis Grand Cru Valmur forms a valley which offers subtle variations in terms of exposure: one part faces northwest and the other the south. With a well-balanced mineral character, the Valmur is imposing through its strength and surprising fruitiness. The wine comprises of 100% Grand Cru chardonnay, aged in old French oak for 14 months. A multitude of flavours can be discovered, including lemon, pepper, brioche, licorice and toast with mineral strength underpinning all.

A diversity of ripeness is created by using the traditional method of harvesting the fruit a number of different times during the ripening period, achieving complexity, completeness, and balance. Wine by Farr G.C Chardonnay, Geelong The GC Chardonnay is named for Gary Charles Farr who began gold mining in Bannockburn in the 1970s. a complete Chardonnay. The fruit is hand-picked then pressed whole-bunch. The resulting juice and solids are chilled prior to being put on 35% new French oak. Over the following two months, natural fermentation will occur with a little less stirring to promotes the malolactic fermentation. After racking, fining and a little filtering, the wine is bottled nearly a year later. Those at the Farr winery call it a complete Chardonnay.
