Delving further into the abundance of native treasures at the Australian National Botanic Gardens, Ad Crescendum var Flosferam Native Gin continues our collaboration with the gardens. This gin is quintessentially Australian, representative of our native flora and highlighting the importance of conservation at the gardens. The nose is crisp and piney. A soft, bright and herbaceous beginning, with delicate floral notes across the tongue. Slight umami. Leads to rich and sweet bush honey notes to finish.
Wild Hibiscus Distilling Co Finger Lime Gin
Ten years in the making, this gin is the distillers masterpiece. Featuringg suspended finger lime caviar from the distillers own farm at Kurrajong Heights. The little balls pop in your mouth when you bite them releasing a 40% alcohol burst of finger lime gin which is different to the gin they are suspended in. A medley of Hawkesbury grown citrus Kaffir Lime, Tahitian lime leaves and Navelina orange makes this a gin experience like no other. Complex in its craft, but incredibly simple to enjoy as the perfect G&T. The bottle is mesmerising to look at and is often referred to as like a gin snowdome.

Nordés is produced slowly and with great care. A carefulselection of the best neutral alcohols, together with the useof white Albariño Galician grapes, are the indispensablebase of our gin, giving Nordés its unmistakable fresh andsoft character. The distilling process is enhanced with themaceration of 11 botanical elements.Among them, the presence of 6 native Galician herbs -suchas sage, lemon verbena, laurel, peppermint, eucalyptus anda sea plant, the glasswort- which give the product its uniquely fresh and aromatic character. It also incorporates juniper, cardamom, ginger, hibiscus and black Ceylon tea.An intensely aromatic gin, with delicate notes of white fruit in harmony with balsamic notes of mint, eucalyptus and bay, accompanied by a subtle note of juniper. Fresh and fruity on the palate, reminiscent of laurel and juniper on the noseFill a wide glass with lot of ice, add 5 cl of Nordés gin, 20 cl oftonic and and garnish with three white grapes stick. This Barrel Aged Gin combines two great aspects of the Wairarapa: native bush and Pinot Noir. Distillers and brothers Stew and Chris Reid take their Native Gin, which uses three native botanicals (Kawakawa, Manuka and Horopito), and age it for three months in ex-Martinborough Pinot Noir French oak barrels.Not only is this Gin truly reflective of the region it is produced in, but it challenges your perception of what gin can be. Four Pillars Navy Strength Gin
Four Pillars Navy Strength is a gin very much in the style of the Rare Dry Gin but with the volume turned up slightly beyond 11. At 58.8% ABV the gin can support some more robust and interesting botanicals, so there are three new botanicals that are both new (and fresh), including fresh turmeric and ginger. Together they have heightened the spiciness of the gin, and the turmeric in particular has added weight and a lovely earthiness to the palate. Also in the botanical basket about half the normal oranges have been replaced with some explosive native finger limes, grown in Byron Bay. They have an intensity of flavour and acid that is almost impossible to believe, and in the basket they help the gin attain super citrus notes and lovely high-toned freshness.
