It has a lovely bouquet of dark berries and mocha with a soft fruit-driven palate of red currants and plums. The palate is soft, juicy and lingering. A number of parcels are sourced for this blend, once the grapes have reached optimal ripeness the fruit is harvested during the cool of night for delivery to the winery. The fruit is destemmed and sent to static fermenters for a long cool fermentation. Once pressed off skins the wine is pressed off to oak barrels for 9 months maturation of 9.
