Undertones of cashew, butterscotch and vegemite umami from extended lees contact and careful oak selection. The pallet is showing rich peach and pear fruit with spicy undertones. Extended lees contact in French Oak barriques adds dimension and length to the wine providing great texture, intense flavour through the length of the pallet. The wines finished dry with crisp acidity and a gratifying creamy finish.

David Hook Orange Vermentino

Vermentino is widely planted throughout the Mediterranean, often along the shore lines of both coasts and islands, where it produces bright clean lively wines with classic sea spray and wild herb characters. The variety has good acidity and can be made in several styles. The lighter aromatic style achieved with light pressing and cool fermentations generally without skin contact or oak maturation highlights the varieties fresh fruit and acidity. The grapes for our 2022 Vermentino are frome the Central Ranges grown at altitude on the slopes of Mount Canobolas at Orange. The wine was stored on lees in tank for 3 months prior to bottling. The resulting wine is pale straw in colour with slight green tinges. It has aromas of orange blossom, ripe nashi and a flinty background. The palate is rich with ripe citrus flavour and the wine finishes with a touch of salinity and a slight pithy grapefruit bitterness. The perfect wine with grilled sardines.

Highland Heritage Mt Canobolas Cellar Release Chardonnay

Oak Maturation: 9 months in new and one year old French oak barriques. Monthly batonnage on lees. Vintage: The 2016 vintage cold and wet in the early part of the season. The temperature then spiked in early October continuing to a mixture of warm days wet days and cool dry nights in the latter part of the season. Most rainfall was in the pre Spring growing period with drip irrigation required towards the end of the growing period around April. Winemakers Comments: Only free run juice used in this wine, inoculated with Burgundian yeast strains. Barrel & malolactic fermentation at 20 degrees celcius. The wine is pale gold in colour with youthful, green hues. The bouquet is elegant and intense with smoky citrus lime and floral varietal characters.The palate shows youthful intense varietal floral Riesling fruit characters filling the length of the palate balanced with a long crisp clean acid finish. There is also a hint of smokiness and lime characteristics, a full middle palate and a touch of alcohol sweetness on the finish. While extremely enjoyable now, the history of this wine shows it will gain further complexity and depth of flavour over the next 4 - 10 years. The wine is crisp and sophisticated and may be served alone or with fine cuisine such as white meat fish yabbies or seafood.
