The wine was left on the skins and fermented partially before being pressed off. The skin maceration went from 9 days to 44 days depending on the parcel. The fruit was processed in different vessels: open fermenters, closed tanks as well as amphorae. This explains some of the complexity and the many layers of this wine. We look at it being a natural step in creative as well as artisanal winemaking. On the advice of eminent agronomist Dr. John Gladstones, Dr. Kevin and Diana Cullen planted a trial acre of vines at Wilyabrup, Margaret River in 1966. Commencing in 1971, 18 acres of vines were planted on their sheep and cattle farm, including their first Cabernet Sauvignon vines. Sauvignon Blanc, Chardonnay, Semillon, Merlot and Cabernet Franc were planted between 1976 and 1978.

One of the most anticipated white wine releases each year, the Leeuwin Sauvignon Blanc may be small in quantities but is big on ripe tropical flavours and tangy acidity.

Anna and Jason Flowerday run the Te Whare Ra vineyard in Marlborough according to organic and bio dynamic practices. The fruit is picked and sorted by hand, then processed in a winery especially designed for small-batch wine making. On the nose, this Sauvignon has characters of elderflower and white currant with ripe tropical and citrus fruits. These follow on the palate, which is fine and soft with vibrant, fleshy fruit, balanced by ripe, juicy acidity and lingering minerality.

Geoff Weaver Sauvignon Blanc from the Adelaide Hills is quite possible the region's best example of this aromatic variety. The bouquet shows lifted varietal characters of green pea and passionfruit and the palate is textured and long.
