Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then finished in casks that previously held Caribbean rum. To create the ideal finish Malt Master David Stewart, filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches. The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit,with a warm, lingering finish. To create this truly unique whisky, we selectively sourced rare malted rye and the finest malted barley from progressive malt houses, paired them with virgin American oak casks air-dried for 36 months and let it all mature in the maritime air of coastal Sydney. Our preference for malted rye over the far more commonly used unmalted rye affords this whisky a point of distinction evident upon the very first sip. This layered, aromatic spirit offers notes of spiced custard, ginger, stone fruit and baked apple pie with a fresh herbal finish that lingers on the palate.

The distillery is located in the glen of the Kinchie Burn where it derives its name. Glenkinchie is a sweeter style of scotch that is supported by a delightful creamy texture on the palate.
