Sullivans Cove French Oak Single Single Malt Whisky (TD0226)
Established in 1994 Sullivans Cove is the quintessential small-batch luxury whisky. Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged the distillers aim to seek the sublime. Each cask is nurtured to it's natural peak, thousands of tiny decisions go into helping each cask reach its full potential. No two batches will be the same and every batch an opportunity for exploration. Tasmania has some of the cleanest water in world, making it an ideal place for producing world class whisky. Tasmania also has some of the best barley growing land in Australia. The combination of good grain and good water is the foundation of all good whisky. 100% Tasmanian malted barley is used to make all Sullivans Cove whiskies. The wash is brewed locally by brewers with decades of experience before being double distilled in a unique, Tasmanian built pot still (her name is Myrtle). The first distillation, known as the "wash run" produces "low wines" of about 20% abv. The low wines are then put back through the still for the "spirit run" to produce a spirt of around 70% abv. This spirit is then diluted to 63.5% abv before it enters into the casks for ageing. The majority of whiskies are aged in either 200L American oak ex-bourbon barrels, or 300L French oak ex-tawny barrels. Allowed to mature over many years in the unique Tasmanian climate - generally between nine and eighteen years. Sullivans Cove is the quintessential small-batch luxury whisky. Kilchoman Special Release Casado Single Malt Scotch Whisky
Kilchoman Distillery was established in 2005 and is true to Islay's rich farm distilling heritage. The distillery uses local peat cut in the traditional way, slowly distilling all spirits by hand, allowing maturation to occur in traditional dunnage warehouses, and bottling on site without any colouring or chill-filtration. A limited-edition single malt from Kilchoman, Casado takes its name from the Portuguese word for marriage. Initially matured in 38 first-fill ex-bourbon barrels, it was then married in a pair of Portuguese red wine vats for two years before it was bottled. On the nose bonfire smoke with dried apricot, Dr. Pepper, and some coastal salinity as well notes of marzipan and toffee apples underneath. On the palate black pepper is cracked over smoked fish as well as lemon peel, tannic wood and stone fruits. There's a sweet jammy element present throughout. The finish is aromatic spices and red berry tartness that linger.

Lagavulin 8 Year Old Single Malt Scotch Whisky
An unusual age statement is inspired by Alfred Barnard's visit to the distillery in 1887 which became part of his book, “The Whisky Distilleries of the United Kingdom”. According to Diageo Director of Whisky Outreach, Dr. Nick Morgan, “At the end of the tour, he was given a taste of the whisky…he tasted an eight-year-old Lagavulin, which, of course, remember at the time was actually quite old…whiskies were considered to be venerable once they got around six years old in the 19th Century,” Morgan said in an interview with www.whiskycast.com. “He declared that whisky to be exceptionally fine, so our mission with this bottling was to find an exceptionally fine eight-year-old liquid which we thought Barnard would quite like if he were to be back here tasting it today.” Tasting note: Very pale straw gold showing considerable legs. Powerful and complex aromas include cocoa, sea spray, white pepper, dilute Elastoplast and lanolin followed by hints of citrus zest. Several minutes air contact accents the latent malt as well as dark chocolate. Concentrated but also surprisingly soft; almost creamy with grassy malt and a juicy vanilla, kelp and peppermint finish that goes long into the aftertaste. A departure from the 16, but terrific young malt. 48% Alc./Vol.
Ardbeg An Oa Single Malt Scotch Whisky
Named after a peninsula on the coast of Islay, Bill Lumsden has mixed it up with this release employing a combination of casks: Pedro Ximénez, charred virgin oak and ex-bourbon. An Oa (pronounced “an oh”) will become a part of the core range joining the 10 year old, Uigeadail, and Corryvreckan. Lumsden describes the whisky as "...smoky, sweet and rounded, with unusually, grilled artichokes in the finish." Tasting note: Bright gold. As always deceptively complex, developing with sherried oak aromas, lanolin, sooty vanilla and later, dark chocolate and suggestions of smoldering green pine. Entry is assertively salty, kippery, peppery. Mid palate is oily, medium dry, offering sherried richness along with piney juniper, over-baked sponge cake, black tea and hints of smoked meats at the finish. No shortage of peat, but loses some momentum in the final stages. Non chill filtered. 46.6% Alc./Vol.
Ardbeg Corryvreckan Strength Single Malt Scotch Whisky
Ardbeg's Corryvreckan replaced the discontinued Airigh Nam Beist . Unusually dry for Ardbeg, otherwise an utterly brilliant, unique expression of Islay. Tasting note: Dull gold colour with pale straw hue. quite an unusual nose for an Ardbeg. Rich chocolate, vanilla, lemon butter and spice above a smoky salty layer, the only evidence that it's Ardbeg is the end note of terracotta/clay/wet charcoal. With time in the glass, fresh smoky characteristics emerge, but do not dominate. The intense palate is initially rich and creamy, quite heavily peated, rich chocolatey flavours mingle harmoniously with the lemon butter before the unusually overt oak grips dry and the peat explodes - softly! The back palate is dry, firm, overtly oaky, and extremely spicy. Excellent balance at cask strength. Warm, tingly, spicy finish. Lemon, dry cocoa, strong spice and gentle smoke dominate the lengthy aftertaste. Austerely dry by Ardbeg standards but one of their best on record. 57.1% Alc./Vol.
Bruichladdich Octomore 13.2 Strength Single Malt Scotch Whisky

This is the missing link in the Octomore 13 triptych, arriving later than the other two. Matured full-term in first-fill Fernando dè Castilla Oloroso Sherry butts and peated at a generous 137.3 PPM, the sherry influence is said to work a treat, complementing the smoke and vibrancy of the young malt. Says Head Distiller, Adam Hannett, “There’s a beautiful influence from the full-term maturation in these first fill Oloroso sherry butts. They’ve matured in the dunnage warehouses in the village of Port Charlotte, and the combination of cask and a slow and cold maturation has really accentuated the salty tang of the spirit. ” 58.3% Alc./Vol. Non chill filtered. Notes from the producers... There is a wonderful viscosity and presence on the palate. Notes of smoked nuts and leather, warm orange marmalade on fresh scones. Dried apricot and hints of peppery spice toward the finish. Earthy peat smoke comes to the fore with a little time, along with the fruit and nutty aromatics of the oloroso casks. A salty tang of sea breeze creates a lively combination of flavours to finish.
