Product Description: An elegant Speyside single malt shaped by The Macallan’s collaboration with JING Tea. The Macallan Harmony Collection Jing Phoenix Honey Orchid Tea is a limited release inspired by the aromatic depth of single garden oolong from Phoenix Mountain in Guangdong. Matured primarily in sherry seasoned American oak with supporting European oak and a subtle influence from ex bourbon casks, it captures a spectrum of honeyed fruit, soft florals and restrained oak sweetness. The aroma leads with peach, nectarine and delicate orchid notes alongside hints of dried tropical fruit, citrus warmth and gentle toffee. The palate follows with a silky, medium bodied profile that layers honeyed malt, peach and apricot compote with light vanilla and measured oak spice. A touch of leafy astringency nods to the tea that inspired the release while a faint roasted edge reflects the presence of European sherry oak. The finish is moderately long and quietly expressive with lingering honey, apricot and a soft floral accent. This whisky’s balance of fruit, perfume and fine tannin lends natural harmony to dishes such as lightly spiced duck or sweet spanner crab. Glenmorangie The Nectar D'or Single Malt Scotch Whisky ( )
Thirty years ago, Glenmorangie innovated in the art of extra-maturation, transferring spirit first matured in ex-bourbon casks, into ex-wine casks so that it could gain further layers of flavour. For The Nectar d'Or, the whisky is finished in barriques from Sauternes: the most famous sweet wine of France. This whisky develops its rich, dessert-like flavours of white chocolate, cr me de caramel, with hints of coconut. Almond croissants flecked with ginger and honey.
Ardbeg Uigeadail Single Malt Scotch Whisky
“The elemental opposite of the sophisticated Lord of the Isles.” Perched on a wave washed, rocky headland, the Ardbeg distillery was founded in 1815 by the MacDougalls of Ardbeg. The distilleries scattered white washed buildings are reminiscent of a Dutch settlement and add to the dramatic coastal landscape. Ardbeg has had a chequered history and in recent times had been closed down for many years. Glenmorangie acquired Ardbeg in 1997 and has set about restoring the distillery to its former glory. First launched in 2003, “Uigeadail” (the loch from which all Ardbeg water flows) this cask strength, heavily peated Ardbeg is produced from a mix of bourbon casks and older sherry casks. The combination gives this whisky a velvety texture, with a sweet and smokey finish. Tasting notes: Bright gold appearance. Big, sweet sherry influenced nose offers dried apricot and marmalade scents over menthol and sweet cedar smoke. Some ripe green apple notes emerge with time in the glass. The palate is off dry with a rich, dark chocolate entry becoming heavier and fudge-like with orange chocolate, sweet cereal and the peat continually reinventing itself - at once dry and sooty, then tarry and finally kippery on the finish. Excellent balance at cask strength. Boiled lolly and spice aftertaste with a subtle spearmint fade. Latest batch tasted October 2010.
Highland Park Viking Honour 12 Year Old Single Malt Scotch Whisky
The extreme northern archipelago of mostly uninhabited islands around Orkney is in every sense isolated. It's not known when the first distillery was established in Orkney, but there were almost certainly local producers by the middle of the eighteenth century. Above the capital, Kirkwall, is a rise with fine views out to the northern isles traditionally known as the ‘High Park’. It's here that Highland Park distillery was said to have been founded in 1795. There have been several different owners, before coming into the hands of James Grant and family in the late 1800s. By 1826 when the distillery became legal, the site had already become known as 'Highland Park'. Now owned by The Edrington Group , its location must partly be accountable for the distinctive character of the malt, through the surrounding ocean, the local peat and the Orkney spring water. To blenders, the distillate is prized - many of whom claim it possesses unique 'catalystic' properties which enhance flavours in other whiskies. Nearly always ranked alongside the classic malts, revered as a spectacular after-dinner drink and without doubt '...a malt to challenge any Cognac or Armagnac', the house style is fragrant and floral with a smooth, honeyed character over hints of citrus and smoke. The phenol content of the distillery's own malt is 30-40ppm but the remainder which is imported from Simpson's is unpeated. The distillery is serious about quality oak, spending $20 million a year on wood alone, more than any other Scotch distillery - despite having a fraction of the output of some of the larger brands. First released in 1979, the 12YO is still the best introduction. Employing about 20% first-fill sherry casks, a name change and packaging update took place in 2017. Retasted 2019 ...Surprisingly full at 40% ABV but loses vitality and flattens out towards the finish. Otherwise, mostly unchanged. 90 points First tasted 2012... Brilliant, bright gold appearance. Almost floral in delivery. Honey and toasted barley mingles with a perfectly balanced waft of peat and brine. An exceptionally soft, silky entry offers good concentration and the same seamless integration as found on the nose. Medium dry, subtle nashi-pear fruitiness combines with a judicious slap of peat. Crescendos with a spicy flourish at mid palate. Finishes more peaty than some previous bottlings with drying brine, spice and smoke lingering before a honey fade. Getting closer to what this whisky was 10 years ago. 40% alc./vol. 92 points

Glenmorangie A Tale of Winter Limited Edition Single Malt Scotch Whisky
Released in the UK in 2021, 'A Tale Of Winter' is the latest annual limited edition from Glenmorangie to arrive in Australia, coinciding with the approaching Winter season and World Whisky Day (Saturday the 21st of May). Like its predecessor, "A Tale of Cake', this is a concept whisky from the inside out. Bill Lumsden has used 13 year old (plus) x-Bourbon matured single malt and finished it in Sicilian Marsala wine casks. The flavours of Marsala typically hint at apricot, vanilla and brown sugar and range from dry to very sweet. Evidently Lumsden felt these casks were perfectly suited to provide the profile he was looking for. The marketing team have responded with an eye catching knit-sweater-patterned presentation to evoke the feeling of the season. As for the whisky itself, it kind of reminds you of mulled wine or spiced rum. The colour is deeper and the nose heavier and richer than most 'Morangies to date; Festive spices feature, with cinnamon and nutmeg over ginger snaps and hints of orange cake and boiled confectionary. The palate is more full bodied again with a deliberate spice theme: Ginger beer, fruit cake and persistent warming spices ricochet around the drying finish. Ultimately, it's a whisky that achieves exactly what the label suggests - a genuine Winter warmer. Besides sipping straight, Glenmorangie recommend it in a Winter Old Fashioned (recipe below). 46% Alc./Vol. Non chill filtered.
Benriach 10 Year Old Single Malt Scotch Whisky
The BenRiach's fruit-laden style is perfectly captured in this 10 year old expression. At the distillery they are known for doing this a little differently. Their philosophy is to embrace the creative possibilites of distilling and maturation, all in the pursuit of flavour. This 10 year old single malt has been matured in three casks, bourbon, Oloroso sherry and virgin oak. The whisky is then expertly combined by their Master Blender, creating a smooth Speyside drop, full of fruit, toasted oak spice, and luscious sweetness. A Speyside single malt Scotch whisky as intriguing and extraordinary as Benriach could not have come to be without a unique whisky making heritage, dating from 1898, when founder John Duff built his distillery.
GlenAllachie 8 Year Old Koval Rye Finish Single Malt Scotch Whisky
The GlenAllachie Distillery was designed in 1967 by William-Delme Evans and built by Mackinlay McPherson. This was the fourth distillery designed by Evans and was created to be almost full gravity fed to run on reduced energy. The first production run for the distillery was in February 1968 and began with just two stills, further increasing to four after just six months. Bottled at 48%, this golden malt was first matured in the finest American Barrels with an additional maturation period in Organic Rye Quarter Casks from Chicago’s Koval Distillery. The wood to liquid ratio in these second-fill casks is greater, meaning the signature Rye spiciness has a greater impact on the spirit. Rich Gold in colour with rich cinnamon and nutmeg spices and waves of honey and butterscotch on the nose lead to flavours of sweet roasted spices enriched with honey, butterscotch, cooking apples and cloves.
