In 1999, Guillermo Erickson Sauza decided to bring back the old Sauza family distillery to life. Today he produces Tequila Fortaleza there using 100% stone-milled agave, entirely produced on the estate which lies right in the middle of the town of Tequila. Fortaleza Blanco Tequila is unaged. It has an amazingly soft texture and vegetal sweetness with a long and satisfying finish.

Don Fulano tequilas are made from agaves grown by fifth generation agave growers in the Jalisco highlands of Mexico. They are then distilled in the valley town of Tequila. The blanco tequila, packaged in a stunning bottle, is elegantly complex with notes of butterscotch and aniseed.

To make Curado, the distillery uses a blanco Tequila from the Highlands of Jalisco as a canvas, then they infuse the liquid with pieces of cooked Agave. At first the infusions only used Blue Agave from the state of Jalisco, but the project soon evolved to include other varieties of Agave from other regions of Mexico. They want to build bridges, not walls. Curado is an innovative product, full of subtle nuances, continuing to respect the Mexican tradition and culture. Tasting note: Made from 100% Arabica beans (reportedly, some other brands rely on artificial flavouring). Fabulous burnt umber appearance is thick and glass staining. Issues aromas of freshly roasted coffee beans, dark chocolate and vanilla. The tequila base is more salient in the mouth, with a creamed-up texture that’s akin to coffee flavoured milk with a splash of tequila and dark chocolate for good measure. Excellent sweet-dry balance. Impressive. 34% Alc./Vol.

About 10 years have passed since the blue agaves in this tequila first stretched their leaves towards the hot Mexican sun, can you imagine? An agave must grow for 8 to 10 years before it can be harvested for tequila production. This is followed by the cooking process and then fermentation, which in turn takes several days. This tequila then matures in carefully selected bourbon oak barrels for at least 8 months. The most important ingredient in our tequila is undoubtedly time.
