Headlands Distilling Co. Liqueur of the Illawarra Plum

Headlands Distilling Co. was founded in 2015 by four friends, with nothing more than a goal to produce unique, handcrafted spirits. Featuring two science PhD’s- Lachie and Thomas, an organic chemist/chemical engineer- Jared, and a business specialist, Dean, each member of the team brings an individual set of useful skills. Headlands Distilling Co. focuses on two main areas. Crafting delicious spirits completely from scratch on site and creating tasting experiences which have not been done before. Liqueur of the Illawarra Plum is rich, velvety & smooth. The consistency and taste is similar to that of a Port or Sherry; perfect for sipping neat after dinner with dark chocolate or enjoyed over a scoop of ice cream. The rare, native Illawarra Plum (Daalgaal) is hand foraged from along the coastline. Following in-house fermentation and distillation, the spirit is barrel aged on the plum skins, amplifying the flavour profile.

Hobart Whisky Tasmanian Whisky Liqueur

Hobart Whisky Tasmanian Whisky Liqueur is a beautiful blend between their Single Malt and Tasmanian Manuka and Wildflower honey, orange zest, and spice. Sweetness is driven by the honey which is balanced by plenty of zesty orange peel notes. The variety of spice drives depth and complexity without overbearing. A long finish, with the spices and orange zest pleasantly lingering. The 35% abv allows for the single malt to come through, best served with ice to chill, perfect in a cocktail with tonic, or the base of a hot toddy with warm water, honey and lemon.

Skinos Mastiha Spirit

The remarkable flavour of this clear spirit is hard to describe: it smells like a sun-drenched rocky Mediterranean hillside covered in wild herbs, like crushed juniper berries and fresh-torn spearmint leaves, like the hauntingly deep aromas of rain-soaked cedar wood and violet essential oil.

Chartreuse Yellow Liqueur

Milder and sweeter than the famous Green Chartreuse, Yellow Chartreuse was introduced to the world in 1838. It also is presented in the traditional Chartreuse liqueur bottle embossed with the seal of La Grande Chartreuse. Its colour is entirely natural with no artificial flavours or preservatives. It, too, can be enjoyed neat or in a long drink. To bring out all its flavour, it should be consumed very cold, even on the rocks.

Chartreuse Green Liqueur

Chartreuse green is an aromatic French liqueur flavoured with 130 herbs. Naturally green colour, it can be served cold or as a fragrant base to cocktails.
