Four Pillars Christmas Gin is the creation of Four Pillar's head distiller, Cameron. This is his tribute to the four things he loves: Australia, Christmas, Gin and his late mum Wilma. Each year, Wilma would make Christmas puddings on Victoria Day while the rest of the family watched the races. So a couple of years ago, on Derby Day, Cam put some puds made to her recipe in the botanical basket of Wilma (Four Pillars' still) and distilled a gin. Cam was also working on a gin aged in Four Pillars' collection of 80-year-old muscat barrels. He decided to blend these together and add a tweak of classic Rutherglen Muscat. The result smells like Gin and tastes like Christmas. Sip straight over ice, simply mix with ginger ale or make a cracking Martinez. This years artwork is by the incredibly talented painter Jane Reynolds. Jane's art is all about the relationship between colour, form, and light. The team at Four Pillars challenged Jane to come up with one of her signature hyper-real compositions that would celebrate the colour and iconography of Christmas. Diviners Distillery Outliers is a small batch, cold distilled, Australian produced gin. Considered to be the distilleries nightlife gin, it was crafted to awaken the sense with exotic and zesty flavour combinations. The nose has aromas of cardamom, heady kaffir lime, and star anise. Native finger limed drives citrus freshness across the palate. Star anise and myrtle pepper provide a spicy spine. Coriander commands citrus, pine, and spice camps. Mix with premium tonics, sodas, and bitters with no need for fruit garnish.

Knocklofty 'Garden Party Gin' is made with seasonal, surplus berries from the Westerway Farm (Tasmania). The berries are steeped in the gin to provide a unique, natural taste.

Our figs are poached gently to extract the sweet fig aroma, essence, and earthiness. The gin botanicals and spirit show early on the nose with all the fig showing on the palate.
