Proudly, a wine style that hasn’t succumbed to the dictates of fashion or commerce. St Henri is rich and plush when young, gaining soft, earthy, mocha-like characters as it ages. It is matured in old, 1,460 litre vats that allow the wine to develop, imparting minimal, if any oak character. Although a small proportion of Cabernet is sometimes used to improve structure, the focal point for St Henri remains Shiraz.

The Noble One by De Bortoli is considered Australia's premier dessert wine, and for obvious reasons. The 2002 Noble One is a classic expression of the style with rich apricot treacle characters with fig and orange blossom still active on the nose and palate. Clonakilla Shiraz Viognier began its life after a career defining trip to the Côte-Rôtie in the mid 90s which set Tim Kirk on the journey towards producing one of Australia's best Shiraz. Determined to show that Australia could produce elegant but still powerful Shiraz, Tim's work has paid off with his flagship being acclaimed worldwide. In only 15 years, the Shiraz Viognier has attained 'Exceptional' status with Langton's, the highest possible.

The bouquet is layered with abundant aroma's of plum pudding, cigar box, blackberries & chocolate. It has an excellent length of flavour, velvety tannins and hints of smoky oak. 71% Shiraz and 29% Cabernet Sauvignon are separately fermented & matured in a combination of new French & American oak before final blending.

Penfolds RWT Shiraz is a big juicy Barossan Shiraz refined by the use of older French oak barrels. 1998 is considered to be one of the classic vintages of the modern age. Drinking wonderfully now but with many years still to come in its development, this is a great addition to any cellar.

McWilliam's Mount Pleasant Maurice O'Shea Shiraz continues lead the pack of great Hunter Valley Shiraz. A lovely return to old form, this Maurice has a striking purple hue to it in the glass. To the nose aromas of liquorice and spice with hints of cedar will beguile. Layers of complex flavours dance across the palate including savoury, spicy dark fruits like dark plums and cherries.
