Levantine Hill Optume Yarra Valley Shiraz Made from 100% Shiraz from parcels selected by Paul Bridgeman, the wine is entirely matured in French oak (29% of which is new). The wine lands at 13.5% abv and has some weight to it but the vintage shows in the finesse of the wine as does Bridgemans finesse. Theres a brooding element to the nose in dried figs, dark spice and a slight edge of white pepper. The palate has a slow and steady pace that ebbs the flooding tide of dark flavours. It is stylish with the modern expression of Australian style Chardonnay: tense, taut and sulphidic. It reclaims the middle ground where body, flavour and palate weight co-exist with structure, texture and restrained acidity. This single-vineyard Chardonnay has well integrated natural acidity with rich varietal expression.

This Levantine Hill Estate Cabernet Sauvignon is redolent with blackberry, blackcurrant and cocoa-rich chocolate on the nose. Followed by the supple, balanced middle palate evokes truffle, bramble and earthy complexity on the palate. An outstanding example of site and region, its chewy, satisfying tannins are beautifully integrated with fleshy fruit characters, hedonic spice and lingering, persistent length.

Levantine Hill Estate Syrah 2013 has bright crimson colour. Brooding, lifted complex aromas of red berry compote, musk, cardamom and white pepper compliment the underlying nutmeg and vanillin bouquet. The elegant medium-bodied palate abounds with spice and earthy nuances in a concentration of savouriness. The silky ripe tannins have been deftly integrated with the underlying oak providing carriage for the fruit weight and lingering flavours to a pronounced and persistent finish.

Drawing its inspiration from the Bordelaise tradition of blending multiple compatible grape varieties; This Levantine Hill Melange Traditionnel Blanc is a complex, aromatic wine that is crafted for its ageing ability. It displays subtle fruit characters of blood orange, musk, ginger, apricot and gooseberry on the nose with well-integrated savoury oak and acidity on the palate. It has a textural silky finish. A perfect foil for Munster or similar washed-rind cheese.
