Some would say McLaren Vale is the spiritual home of Australian Grenache. We are not about to start arguing when Grenache like this one from Chapel Hill are produced. Generous rich red fruits with smattering of dried herbs and a fleshy mid-palate. There is real concentration and complexity to this wine.

Chapel Hill The Parson Grenache Shiraz Mourvèdre

The Parson GSM is a traditional take on three of McLaren Vale's most important and historical varieties. The wine displays hints of rosemary and aniseed the nose. The big palate is layered with liquorice and dark chocolate flavours that are beautifully interwoven into the textured firm tannin structure.

Chapel Hill The Parson Cabernet Sauvignon

Chapel Hill's Michael Fragos loves using the Parsons label to showcase McLaren Vale's diversity and varietal character. To achieve the desired style and to harness the regal varietal flavours of Cabernet Sauvignon, the grapes are strategically harvested to avoid any green tannins or overripe jammy fruit flavours. Full-bodied in style, the palate is both eloquently pure and broodingly complex, supported by fine, savoury tannins. A great companion for a medium rare steak with a solid helping of steamed greens.

Chapel Hill The Parson Shiraz

Chapel Hill's Michael Fragos loves using The Parson Shiraz to showcase McLarenVale's diversity and varietal character. The Shallow soils over livestone in maritime influenced vineyards between McLaren Vale and Masline Beach and also around Bowering Hill, provide explosive blueberries and liquorice with finesse and a wonderfully framing tannin structure. Up in the foothills of the Mount Lofty ranges, a Kangarilla vineyard offers Indian spice complexities that many higher priced wines would simply love to have. The added length and savoury tannins of this component and the use of some French oak result in a beguiling final release that is extraordinary.

Chapel Hill Sangiovese Rose

Brimming with rose petal and cranberry aromas. The palate explodes with the flavours of fresh juicy raspberries and redcurrants finishing with a lingering pomegranate feel. Chapel Hill have opted for a drier style, as this in combination with the textural mouth feel showcases the intricacies of Sangiovese and also allows for the wine to be enjoyed with food.

Chapel Hill Chardonnay

One of the very best Chardonnays doing the rounds from McLaren Vale due to its lighter, slightly austere nature. Citrus melon and fruit-salad aromas give this Chapel Hill Chardonnay an attractive lifted bouquet and the palate is flavoursome fresh and lively. Great drinking!

Chapel Hill McLaren Vale Mourvèdre

While normally associated with Grenache and Shiraz blends, Mourvèdre recently has begun to stand on its own two feet as a stand-alone wine. Quite evocative in nature, Chapel Hill's Mourvèdre is a dark and brooding red with wonderful hints of spice and violet tones. Walking the line between medium and full-bodied, this wouldn't be out of place next to either a thick cut steak or a plate of picked Mediterranean vegetables.
