‘Mon Tout’ - in French, means ‘my everything’. It's an ode to the great loves in our lives. And that's what Mon Tout is for the winery. They've always loved the raw possibilities and natural outcomes of minimal intervention winemaking, and have worked over the years to source fruit with lower impact and gentler farming - which they believe is the future for wine. Mon Tout Heydays Chardonnay 2022 vintage comes with another change up this year with Mount Barker dictating even more of the style than the 2020 release, yet Heydays is still overtly, beautifully and enticingly Chardonnay. Delicate floral aromas of honeysuckle, apricot, and lemon zest. Flavours of stone fruit, lychee and pear combine in a silky and seamless manner. The fine, mineral acidity and oak tension adds restraint, texture and length.

Tasting: This Chardonnay captures the very essence of what Margaret River Chardonnay is highly regarded for while simutaneaously including a modern palate. Great fruit expression with creamy stone fruit and fresh apple melded with bright citrus with a hint of tropical fruit. Rich mouthfeel and rounded palate siplaying hints of vanilla and butterscotch. Winemaking:Mostle machine harvested at night with some early morning handpicked fruit. Pressed into stainless steel tanks to settle, then racked to barrel while still hazy for wild ferment, allowing natural expression. Aged in a mix of old and new French barrels, with some lees stirring to build up texture and creaminess. Barrels carefully selected and blended to create the desired Chardonnay.

Way back in the 1920s, there was a spirited and lively stallion that roamed the Wilyabrup region of Margaret River, Australia. He was called ‘Moses Rock’, named after the famous left-hander surf break in the area. Moss Brothers' Margaret River wines reflect his spirit and that of the Margaret River region. This pretty Pinot Gris displays fresh aromas of lemon, nashi pear and melon. A rich and generous palate with flavours of tropical fruit, citrus and spice with a creamy mid palate adding complexity. 6 months in French oak gives a lovely savoury finish. Serve alongside roast chicken with preserved lemon and fresh herbs.
