La Dominique is a Grand Cru Classe growth of Saint-Émillion, leading the way in many fields of modernisation and innovation amongst the chateaux of Bordeaux. Owner Clement Fayat has spent decades on improving everything from vinification facilities, to drainage, to the cellars, to a bright red (and controversially visible from a distance) vat house completed in 2013. Benefitting (similarly to their famous neighbours, Ch. Cheval Blanc) from a proximity to Pomerol, La Dominique produces Merlot-led wines that combine vigour and elegance.

Domaine A Cabernet Sauvignon, which also includes a small percentage of Merlot, Cabernet Franc and Petit Verdot is a foil to the more opulent mainland styles. Violets, roses and blackcurrants pervade through the wine like an English country garden. The tannins are especially fine grained and there is a beautiful freshness and mineral quality on the palate. The parcels of fruit are batch vinified in stainless steel tanks before maturation in 100% new oak for between two and three years.

Further testament to both vine age and the merits & complexity of this blend, which allow the wine to rise above an otherwise challenging year. Classic blackcurrant, cigar box and tapenade aromas, overlaid with notes of violet, Christmas cake and sweet spices, lead onto a supple, savoury and effortless palate that builds towards a long & lively finish.

One word - legend. Jack Mann served Houghton for a remarkable 51 consecutive vintages. His determination to create wines of intensity, elegance and regional character have inspired a generation of Australian winemakers to achieve great things. Simply one of this country's greatest Cabernets, this wine is not just single vineyard fruit, the selection process is so rigorous that often it is just a few rows from the Justin Vineyard.
